I'm going to make some chicken corn chowder from scratch today so I've
been looking at various recipes just to get an idea of ingredients. I'll often look at several then pick and choose ingredients that sound good. In this one recipe, the ingredient list sounds good but the picture of the finished product looks odd. For liquid, it calls for 4 cups of chicken broth and at the end, a mere 1/2 cup of half&half mixed with cornstarch. My thoughts a 1) The pic of the finished chowder does NOT look very good. 2) Using 4 cups of chicken broth and 1/2 cup of half&half, there is NO WAY it's going to look like that when done. (very loosely, really just to make sure I don't forget something You just need to adjust for the food item you are featuring.) CHOWDER BASICS 1 tablespoon vegetable oil or extra-virgin olive oil, 2 tablespoons butter 2 all-purpose potatoes, peeled and diced 2 ribs celery, chopped 1 small red bell pepper, seeded and diced 1 bay leaf, fresh or dried Salt and freshly ground black pepper (1 tablespoon Old Bay seasoning blend, -- if you are making a fish/seafood chowder, otherwise use something like Lawry's or make up your own seasoning) 3 tablespoons all-purpose flour 2 cups vegetable or chicken stock or broth 1 quart whole milk 3 cups corn kernels, scraped fresh from the cob or, frozen kernels 8 ounces cooked lump crab meat, fresh is available in plastic tubs at many fish counters Optional: 4 small bread boules, 6 inches, hollowed out, preferably sour dough, optional Toppings: Oyster crackers Hot cayenne pepper sauce Sliced scallions Heat a deep pot over moderate heat. Add oil and butter. As you chop your veggies, add them to the pot: potatoes, celery, onion, and red bell pepper. Add bay leaf to the pot. Season vegetables with salt and pepper and Old Bay seasoning. Saute veggies 5 minutes, then sprinkle in flour. Cook flour 2 minutes, stirring constantly. Stir in broth and combine. Stir in milk and combine. Bring soup up to a bubble. Add corn and crab meat and simmer soup 5 minutes. Adjust the soup seasonings. Remove bay leaf. Ladle soup into bread bowls or soup bowls and top with oyster crackers, hot sauce and sliced scallions. Saute onions first until translucent, saute all vegetables until tender. Probably should use ½ pound bacon. Only use ½ red pepper. Just a pinch of red pepper flakes. Maybe 1 teaspoon of thyme. When I make chowder I add Carnation Evap milk just before the end. I have an old Newfie recipe and fresh milk/cream was not readily available, hence Carnation. They used it for their coffee and tea as well. The finished product does not taste of evaporated milk, it simply tastes creamy. Did you make this? |

As I said originally, the recipe sounds pretty good and I'm going to make it exactly this time. I don't see any problem with taste. My only deal is.....using that exact recipe, there is NO WAY that chowder will look like the picture they showed. It's way too white for the ingredients used. It looks like cold breakfast veggie cereal with tons of milk poured over it. ![]() I'll take a pic of mine when I make it and compare. Their pic was way too white and also a bit too soupy for a chowder, imo. |

Yuk. I think this comment on the website might explain it - the recipe changed but the picture didn't? One of those potato wedges is perfectly clean; it has never been mixed in with the chowder. A lot of the corn is suspiciously pristine, too. I don't do slow cooker stuff very often, but I'd expect about that amount of liquid, not only the chicken broth and half-and-half, but from all of the veggies and meat. Not everybody thinks of chowder as something you can stand a spoon up in; consider Rhode Island clam chowder, which isn't thickened at all. Cindy Hamilton |

He wanted it to appear steamy so when he was set to click I would draw on a cigarette, put a straw in my mouth and blow the smoke down into the chower in a pretty bowl. He got his pics as the smoke popped out. If you didn't know, it looked like the steam was coming off the chowder. |

To me it looks like the Half & Half is floating atop the chicken broth prior to cooking... mayhaps if you give it a stir. hehe I'd make it in a pot on the stove top... why wait eight hours when you can cook that in under an hour (and taste as you go). If not certain you'd like it prepare a 25% batch on the stove top first... if you love it then you can double the recipe... if not so good then you only have one mugful to choke down. I can do much better with no recipe... I'd season it with saffron, and garnish with green onions, I'd definitely omit the bacon or that's all you'd taste.... needs a little red and green bell pepper too, make look Christmasy. I don't much care for creamed soups, I'd prepare a Chinese style hot and Sour soup with with the addition of corn and chicken. There's a Chinese restaurant I went to that served it, it's very good and I'd prepare my own versions too. |
