Default enchilada mole

So glad I prepared that batch of chile's and portioned them out for
the freezer because I found another way to use them this morning.
Most recipes are too complicated for me, but this one is totally
do-able. Hope I like the way it tastes too.

Chiles en Nogada is another way to use those chiles. Many recipes
with different approach are around. Very tasty.

She made it sound like a quick weeknight meal thing vs going full on
