Default Non-tomato sauce for meatballs

Making ABs meatball recipe tonight. Not in the mood for tomato sauce,
though. They are good neat but I want some sauce to go with them. Ideas?
I make these very herby and with a lot of garlic.

Sounds like a quite plain sauce would work, like gravy, or maybe a white sauce, bread sauce, or cheese sauce. If you want a sauce with lots of flavour, how about a green parsley sauce? Compromise between those with a white parsley sauce, or a bread-and-parsley sauce.

Of course the first thing that comes to mind is Swedish meatballs.
They aren't herby or garlicky but cream sauce goes with just about
everything, use heavy cream and season accordingly.

As it turned out when I went to grind the pork I noticed it was quite
smelly. So I am now making this for tonight with fresher pork. This sounds
pretty good. I take it we are talking abbot your basic gravy mad with pan
drippings, flour and milk?

No, I caramelize onions, and mushrooms if you like them, in butter then deglaze the pan with beef stock, check for salt, add black pepper, let it reduce a bit and thicken with arrowroot or cornstarch, just enough to make it nice and silky and not too thick.

Put the meatballs in the gravy to simmer a bit.

Default Non-tomato sauce for meatballs


Paul, a good sauce is an herbed or spicy white sauce, similar to
what you would have with Swedish Meatballs.

You can probably easily find one online; I don't have a personal favorite
except for Stouffers frozen Swedish meatballs ;-))
