These are in the oven now. They are super good. I made them before.
http://tiphero.com/potato-stacks/ I did have to make a few changes. Mix of olive oil and melted margarine instead of butter. I also added onion powder. Left out the cheese. I did use thyme last time and found the flavor a bit overwhelming but my husband loved them. This time I subbed parsley for the thyme. The only thing I didn't do right was the size of the potatoes. The first time they were tiny ones so my stacks were more like mounds. This time I did buy 9 potatoes, a few on the smaller size and the rest large. Too large for my average sized tin. Probably would have been find had I used the oversized one. So mine won't look quite like this. I had to start with the smaller ones then end with the larger ones with each cup having perhaps 3-4 slices above the tin because they were too large to fit in. So if you are going to make them, buy a few extra potatoes and buy different sizes. I have three potatoes left just to give you an idea of the size of what I bought. Would have done better with a couple of large ones and the rest more medium. I also used a knife to cut so my slices aren't quite as thin as those in the pic. But my new knives work great! |

This was actually one Facebook recipe I tried that worked. Quite often, they don't at all. |
