I have some rice stick noodles to use up because I haven't found a use since I bought them. I'm going to sub pork for chicken, and I don't have Chinese Broccoli or any other leafy veg that will stand up to stir fry so I'll just use onions. Everything else I have. I think it will be good. Using canned crushed tomatoes, tomato paste, some grated carrot, garlic and fresh herbs. I'm heavy on the tomato and garlic in particular, as that's how I like it. Plenty of freshly grated Parmesan cheese too, of course. It's a bit after 11am, will start it soon and will gently simmer for the next 6 hours or so it caramelises before serving. |

I don't usually eat this late but I had a hard time getting off the phone with my friend. It's sooo good! Whole wheat crust, topped with spicy jalapeno refried beans (Rosarita, canned), grass fed, organic beef, cooked and crumbled with a bit more chili powder than I intended (little accident there) but husband loves things spicy. Baked for 12 minutes then topped with a big pile of shredded iceberg lettuce, black olives, salsa and a few tortilla chips. Husband had a little shredded cheddar on his and some guacamole and sour cream on the side. |

Part of a big batch that I made one Sunday and then froze in portions. With a little bit of cheese, so I could feel like it was a complete meal. A nice chap. My son made a green bean casserole so he got to taste some real American food. It's kind of an exotic dish on this rock. I don't think I've ever eaten a hot casserole with a cold salad... closest would be baked franks n' beans with sides of coleslaw or kraut and pickles. |

There is some asparagus there too. The leftovers will be used to make lamb curry for tomorrow. |

Trader Joe's has tons of prepped salad fixins, which is handy when you are busy; that stuff is good for stir - fries, etc. For lunch I do a big container of stir - fried (or you can even nuke) veg, with some brown rice or something...can be a huge portion, very filing and healthy. There's food at work, but it's on the "heavy" side... Gotta "fling into spring" healthy eating - wise ;-) -- Best Greg |

A Chicago deep dish pizza is definitely a casserole... in fact many pies are actually casseroles, only they may or may not use a bottom crust... a pot pie is indeed a casserole, as is eggplant parm... even a pan of stuffed peppers is a casserole. A casserole can be defined as a type of baking dish or that which is baked in it... no rule says of what a casserole dish must consist.. can be pottery, glass, metal, or even dough... a calzone is one of my favorite casseroles. In my "Land" cooking mandates one possess an imagination, I don't consider food preparation dictated by recipes cooking anymore than paint by numbers is art. I've cooked casseroles in pumpkin shells. |
