Default Dinner tonight if I have the energy, otherwise tomorrow

I have some rice stick noodles to use up because I haven't found a use
since I bought them. I'm going to sub pork for chicken, and I don't
have Chinese Broccoli or any other leafy veg that will stand up to stir
fry so I'll just use onions. Everything else I have. I think it will
be good.

What are you hard working mon-fri folks doing? Or sun-thurs or other
combos, hell, no matter what about everyone? lol

The recipe I posted says I can use shaved carrots too so I'll add those.

I'm making my 'spag bol' for dinner tonight, using ground lamb (which
makes the absolute best bol sauce IMO). Using canned crushed tomatoes,
tomato paste, some grated carrot, garlic and fresh herbs. I'm heavy on
the tomato and garlic in particular, as that's how I like it. Plenty
of freshly grated Parmesan cheese too, of course.

It's a bit after 11am, will start it soon and will gently simmer for
the next 6 hours or so it caramelises before serving.

If you want meat, look up Jap Chae (japchae), which is calls for sweet
potato noodles - but I don't see why rice noodles wouldn't work.

I am eating my pizza now. I don't usually eat this late but I had a hard
time getting off the phone with my friend.

It's sooo good! Whole wheat crust, topped with spicy jalapeno refried beans
(Rosarita, canned), grass fed, organic beef, cooked and crumbled with a bit
more chili powder than I intended (little accident there) but husband loves
things spicy. Baked for 12 minutes then topped with a big pile of shredded
iceberg lettuce, black olives, salsa and a few tortilla chips. Husband had
a little shredded cheddar on his and some guacamole and sour cream on the
side.

I grocery-shopped yesterday, and had leftover lentil and cabbage soup
after I came home. Part of a big batch that I made one Sunday and
then froze in portions. With a little bit of cheese, so I could
feel like it was a complete meal. (Often, I don't feel like it's
a meal unless it has two different dishes, or at least something
like salad and bread. That's probably why I don't like casseroles.)

I've come to the conclusion that's my problem too. If I make a
casserole (once in a blue moon), I need to have a salad with it or it
doesn't feel like a meal to me.

Perhaps for you. Salads are for all year round for me. Tonight's
dinner will probably be a salad with grilled chicken breast and
sun-dried tomato vinaigrette.

We had an Englishman living in New York over for dinner the other night. A nice chap. My son made a green bean casserole so he got to taste some real American food. It's kind of an exotic dish on this rock. I was wondering why we had a giant can of green beans in the house - it seems that my son wants to make a name for himself with this dish.

I think it'll be lamb here tonight, as I need to get through more of
this gigantic wether I had (his replacement is nearly ready too).

I'm thinking casserole with some plain basmati on the side.
I might even use curry, which I rarely use but am in the mood for it
today.

For me salads are for any time of year and I prepare salads that are
an entire meal... could be upwards of 30-40 different ingredients; a
dozen different veggies, with marinated beans, potato salad, pasta
salad, various luncheon meats, an assortment of cheeses, hard cooked
eggs, crutons, nuts, seeds, and twigs... even pickled beets. I don't
think I've ever eaten a hot casserole with a cold salad... closest
would be baked franks n' beans with sides of coleslaw or kraut and
pickles.

I concur, a casserole needs no salad... not unless it's a lousy
casserole. Perhaps people need to define what they mean by a
casserole... I consider a pizza a casserole, the only salad needed is
brewski or dago red.

I have salad with most dinners, casseroles, etc., and what "you consider"
really doesn't factor into any of my decisions.

My wife is roasting a boneless leg of lamb for supper and is also
roasting some potatoes and carrots. There is some asparagus there too.
The leftovers will be used to make lamb curry for tomorrow.

Rub it in why don't you. I was not impressed with San Francisco weather
when I was there. I had come from 104 degrees on the way up from
Monterey and a damp 53 in SF. Newport Beach OTOH... that was a nice
heat. Get rid of all the people and the traffic and it would be a nice
place to live.

There's nothing crunchy about a casserole, I do rather like having
different textures in one meal.

Besides, a salad is for anytime. I should eat more of it in the
winter.

We like him too. I trust that he's not going to make the same old stuff. My daughter made some things too. One was a cake that had custard on the bottom. I've never seen anything like it before. She could be a great baker - she has an eye for detail and the beautiful and a meticulous way.

I'm feeling lazy these days so all I did was cook some steaks. Hee hee.

Trader Joe's has tons of prepped salad fixins, which is handy when you are busy; that stuff is good for stir - fries, etc. For lunch I do a big container of stir - fried (or you can even nuke) veg, with some brown rice or something...can be a huge portion, very filing and healthy. There's food at work, but it's on the "heavy" side...

Gotta "fling into spring" healthy eating - wise ;-)

They look more like stews to me, but they do satisfy the definition.

Sadly, in the U.S., quite a few casseroles are made using canned
soup as the sauce. Brainwashing by the industrial food complex.

Probably the most popular casseroles in the U.S. are (in no particular
order):

Baked macaroni and cheese
Lasagne
Green-bean casserole (which we've seen discussed here numerous times)
Scalloped potatoes
Tuna-noodle casserole

I'm sure I'm forgetting something, because I'm not a big fan of
casseroles.

Generally starchy, inexpensive, and filling. Popular when we Baby
Boomers were coming up, families had a lot of mouths to feed,
and food was relatively more expensive than it is now.

A Chicago deep dish pizza is definitely a casserole... in fact many
pies are actually casseroles, only they may or may not use a bottom
crust... a pot pie is indeed a casserole, as is eggplant parm... even
a pan of stuffed peppers is a casserole. A casserole can be defined
as a type of baking dish or that which is baked in it... no rule says
of what a casserole dish must consist.. can be pottery, glass, metal,
or even dough... a calzone is one of my favorite casseroles. In my
"Land" cooking mandates one possess an imagination, I don't consider
food preparation dictated by recipes cooking anymore than paint by
numbers is art. I've cooked casseroles in pumpkin shells.

I'd heard so much about King Ranch Chicken. that is one casserole
that I don't like. Taste or mouth feel. I find the color kind of
repulsive. Pink doesn't work for me.
