For corning raw beef from scratch the main ingredients

I think Carol has the nitrate-free corned beef recipes covered very
well. I defer to her.

Wikipedia says that saltpetre was the main preservative used from the
Medieval era until sometime in the 1700s. It will inhibit the growth of
the botulism bacteria also. Unfortunately, nitrates/nitrites are linked
to cancer.

Thanks for your comments. I agree about preservatives and avoid them
whenever possible

I have a good recipe from sf in which the sodium nitrite is optional so that
is perfect for me.

I don't have the book so I don't know how to 'check out ... on the previous
page ...' unless you have the secret way to unlock it)

Yes, I do cook everything I can from scratch, because I think it is better
for our health, besides which I enjoy it)

I wish I could get some brisket around here. For some reason, we don't
eat the stuff on this rock. The times that I have been able to get some,
I'd roast it in a slow oven. It comes out just wonderful. I'd have some
reservation about pickling meat in a brine unless I had too. That
doesn't seem like a very nice thing to do to a beautiful piece of meat.

Maybe part of the problem is posting LINKS instead of actual recipes
people have tried? I added I had not tried the recipes I posted but

Ok, reading up but i used at least 4 with raw beef, It seemed what you
needed.

1 uses Kosher aalt and another table salt.

The recipe calls for celery. Sodium nitrate occurs naturally in foods
like spinach, carrots and celery, but it has not been proven to cause
cancer.

supermarket.

I haven't, YET, made corned beef from scratch, but one of these days.

I need a large cooler, a freezer FULL of ice, AND the brisket,
and the bigger the better. Whole, of course.

Once its ready, I'll FIND some way to cook it, even if I have to
cut it up a lot.

Corned beef brisket pretty much tastes like the canned stuff. What type
