I happened to come across this recipe this morning in the local rag.
They suggest pairing it with a Zinfandel but I am of the opinion that it's a waste to drink wine with a curry. I have found that cider/cyder always makes a good match. (30 mL) extra virgin olive oil 2 onions, chopped 4 cloves garlic, crushed 4 8 oz./225 g lamb shanks Sea salt and cracked black pepper 1/2 cup (125 mL) store-bought rogan josh curry paste 2 14 oz./400 g cans chopped tomatoes 1 1/2 cups (375 mL) coconut milk 2 cups (500 mL) chicken stock 2 tbsp. (30 mL) tomato paste Store-bought tzatziki, mint leaves, cilantro leaves to serve Preheat oven to 350 F. Heat the oil in a large non-stick frying pan over medium heat, add the onions and garlic and cook for 5 to 7 minutes or until soft. Transfer to a large deep-sided roasting dish. Sprinkle the lamb with salt and pepper and cook in pan, turning, for 2 to 3 minutes each side or until well browned. Transfer to the roasting dish with the curry paste, tomato, coconut milk, stock and tomato paste. Mix to combine, cover with aluminium foil and cook for 3 hours, turning halfway. Remove the foil and cook for a further 30 minutes or until the sauce has thickened. Serve the lamb with the tzatziki, mint and coriander. Makes 4 servings. |
