Default Wok Cooking

Given the recent thread on selecting a Wok, I did some research and found a
great article that talks about materials for woks, temperatures, and cooking
techniques:

http://www.seriouseats.com/2012/06/t...the-grill.html

I ended up ordering a 14" carbon steel wok with no coatings and I will
season it myself. In addition, I ordered a Camp Chef outdoor 30K BTU gas
burner, and I will use propane to power that. I should be able to get the
carbon steel wok very hot on that setup.

Good for you! I'm glad you found a solution that will "wok" for you.

Sounds like a solution... just don't do anything stupid like setting
that mega BTU burner close to your abode and especially not on a
wooden deck or within 20 feet of anything combustable, and never ever
leave it lit and unattended, not for a second. I strongly suggest a
proper fire extinguisher... and before your first use have your set up
inspected by your local fire marshal and notify your home owner
insurance agent. Im always amazed by all the firearms laws but anyone
can have a mega BTU flame thrower that can burn down their house and
their neighbor's houses, and even a twelve year old can go to home
depot and purchase a monster chain saw.

Sounds like it will work just fine. I use an propane fired "turkey
fryer" burner (about 100KBTU on propane) and before that a gas ring
salvaged from a natural gas hot water heater, 140KBTU if memory
serves) Unfortunately, that went away when I lost access to natural
gas outside. The turkey fryer works well. The support ring just fits
my larger wok and the heat is kept out of the house.
