Then again, I don't make meatloaf (neither of us likes it), ribs, etc. The leftover meat that I most commonly have is grilled, skinless, boneless chicken breast. It almost always ends up sliced and on a salad. We tend to avoid some roasts because of the leftover issue. I like leftover chicken cold. Leftover roast beef is great heated up gently in gravy. I make a curry sauce for lamb and it is delicious. I learned a couple tricks for stew years ago. First of all, the meat should be browned before adding the braising liquid. Secondly, it is best made a day ahead and then reheated the next day. |

I have not been successful cooking it. Of the dozen or so times I cooked it I only had decent results once. What about things like chicken stock or other stock with meat/bones in it? For me, the closest issue to this that I can think of right now is broccoli. I like broccoli, but make a soup out of it and I'll nearly gag. |

Yes, it will still come out nice if you do not brown the meat first, but the caramelisation makes it twice as good. I made a lamb braise (stew?) yesterday. My method is to firstly brown the meat (which yesterday happened to be a backstrap, no less), then I remove the meat and lightly brown the onion, potatoes, carrots, garlic, leeks or anything else like that - I'll also add seasonings at this point - then return the meat and add other veggies such as peas, cabbage or whatever. I then half submerge all that with stock and/or white wine plus some water. Let it simmer for two hours, then turn the meat over and let it go for at least another two hours.
