It's rare I cook fries and that is the only thing I use ketchup on, so I don't use much but it was the suddeness with which Heinz closed the plant, no prior warning to all their farmers who only grew tomatoes for them. So Heinz are now using Mexican tomatoes, not sure I trust their water supplies too much ![]() |

Homemade Ketchup 1 (28- to 32-oz) can whole tomatoes in juice 1 medium onion, chopped 4 garlic cloves, chopped 2 Tbsp vegetable oil 1/2 tsp salt 1/2 tsp pepper 1 tsp chili powder 1/2 tsp paprika 1/4 tsp cinnamon 1/4 tsp ground allspice 1 Tbsp tomato paste salt and freshly ground black pepper to taste 1 whole star anise (optional and my addition based on my misreading the recipe the first time I made it) 1/2 cup packed light brown sugar 1/2 cup cider vinegar Purée tomatoes with juice in the can with a stick blender until smooth (or use regular blender). Heat oil in a 4-quart heavy pot. Add onion, garlic and salt and cook, stirring occasionally, until the onion is browned Add the spices and cook, stirring constantly, for 1 minute. Add the pureed tomato, tomato paste, brown sugar, and vinegar. Bring to a boil, immediately lower the heat and cook uncovered until very thick, 45 to 55 minutes. Stir occasionally, making sure the liquid doesn't stick to the bottom of the pan. Puree everything together with a stick or a regular blender. Let cool and pour into a glass container. Refrigerate. Keeps chilled approximately 1 month. (I freeze it; it is soft enough that I can spoon out what I need and it defrosts quickly.) Adapted from recipe by Ian Knauer from Gourmet Magazine (June 2009) |

I remember the Heinz ads of the 70s <?> where they used Carly Simon's "Anticipation" to emphasize how thick it was. Now it is thin and watery. I had been looking for something better. Then there was the issue of Heinz pulling out of their southern Ontario plant, leaving local farmers without anyone to buy and process their tomatoes until French's set up shop. Next came the issue of a major grocery chain not carrying French's. I had been intending to get some. Then one day I was searching for something in the pantry and came across a jar of French's ketchup. I guess I must have bought it some time ago when I was looking for something better than Heinz. That was about two months ago and there is still some Bodacious ketchup left. At the rate I use the stuff, it may be well aged before I actually open it. |

We were flooded with Mexican tomatoes this past winter and I complained to the supermarket that they should buy local, it really aggravated me the carrots were also from Mexico when a farmer on PEI produces some of the best carrots I have ever eaten, so I also asked them to put his back on the shelf. I know they track me (because of my air miles card) so I made a point of not buying either ![]() |

FWIW... salmonella seems to be a much bigger problem with them, and washing the outside does not help. However, ketchup is made from tomato paste, so it has already been well boiled. |

Same author, very similar wording, same recipe, except for the anise. It had a solid 4 out of 4 forks rating and 17 reviews. A couple of reviews thought that this really couldn't be called ketchup. On a hunch, I looked up the USDA ketchup canning recipe at the National Center for Home Food Preservation at the University of Georgia, figuring that, if anybody knows American ketchup, the USDA probably does. To my surprise, it had the same list of ingredients, spices and all, as the Knauer recipe at Epicurious, in approximately the same proportions. The main difference was that the USDA recipe started with 24 pounds of fresh tomatoes and produced 6 to 7 pints of ketchup, ready to place on the pantry shelf. One other difference is that the USDA recipe says to put the dry spices in a spice bag, toss it in with the vinegar, heat it to a boil, and when it boils, pull out the spice bag and discard it. Use only the flavored vinegar in the recipe. I think the recipe produces an authentic American ketchup, but it's not a clone of the Heinz recipe as some may expect. Apparently, Knauer or somebody cut down the USDA recipe to make a much smaller amount using canned tomatoes and got it published in _Gourmet_. They didn't adjust the spices, however. |
