I can taste the beet flavour in the leaves, but I do not dislike beets. |

I love beet greens but not readily available. Chard is the same plant without the beet root. Chard is much easier to grow, I never had much luck growing beets, grubs tunnel into them and I don't use insecticides. Fresh beets from market are loaded with chems... if you buy beet tops soak them at least a half hour in several changes of water. It's far safer and easier to grow chard, and there are several types, a very attractive bedding plant... just keep harvesting the outer leaves and you'll have chard all during its long growing season, it likes cool weather. http://www.burpee.com/search?q=chard |

My grandmother made "sweet and sour" vinegar for her dressing. It was equal parts water, vinegar and sugar. Bring it to a boil, combine with bacon fat, and pour over the greens to wilt. She used Bib lettuce, but I'd use spinach in today's world. -- sf |
