Default Valentine's Day cooking

The big day is two weeks away and my plan for the SO is a nice
homemade dinner. I haven't quite finalized the menu, but currently
I'm looking at:

Salad:
Couscous salad with chickpeas, dried cranberries, pecans, shaved
fennel with a citrus vinagrette. Probably will use Israelli couscous
(the big type) for some intereseting texture.

Soup:
Something with kale in it. Kale is good. It's both of our's favorite
leafy green. I made potato-kale soup last night, so something different.

Main dish:
Eggplant en croute. This is an idea I've had for a while, so I'm
finally going to make it next weekend. Take one medium eggplant,
dice it finely. Saute it along with finely dice onion and garlic
in plenty of EVOO. Let the mixture cool and drain for a bit and
then mix it with goat cheese and fresh basil. Wrap portions in
puff pastry and bake till done. Plating will be on nice black
plates with stripes of basil pesto and sun-dried tomato pesto.
This will be served alongside some sort of vegetable, not sure
what yet. Possibly asparagus, but not sure if that will go well
with the flavors. Might also throw in kalamata olives into the
eggplant mixture, but that doesn't sound too great.
