Default Pasta shapes with no machine?

I can and do make my own pasta but I have no machine. I have bought fresh
pasta twice from Whole Foods. It's super good but super expensive. I have
the ingredients but I don't know how to make the shapes. This particular one
is the Campanelle. And for anyone who cares, that was the last name of my
husband's maternal grandma.

The problem I have when I make it is that I only know how to get the flat
noodles. They're thick like I want but since they are flat, any leftovers
just wind up as a solid lump in the fridge, even when coated with oil or
sauce. And they don't quite have the same tooth feel in eating them because
of the flatness.

The purchased ones very much remind me of Spaetzle, even though they contain
no eggs. But I'm not sure that dropping this dough from a spoon like I do
with Spaetzle would work either.

Does anyone know how to shape pasta by hand? Wouldn't necessarily have to be
exactly this shape. I do know how to shape a filled pasta like Tortellini
but that's not really what I'm after here. Oh and my dough is nothing more
than semolina, olive oil, salt and water.

I make my own pasta about half the time. Fresh definitely tastes better
than dried and boxed. Even with a machine to roll and cut, you wouldn't
be able to make that shape except by hand.

I'm just wondering why you want to bother? Again, it must be a girl
thing. All my homemade pasta is like super-wide linguini. It's very long
egg noodles without silly ruffles on the edges. It all tastes the same.

The pasta does all taste the same. However, the shape and texture do determine how much sauce will cling to the pasta. Home made pasta tastes very good so it needs little sauce. Dried pasta has limited taste so I prefer the shapes with a large surface area.

Campanelle seems to be a rolled triangle with a ruffled edge. How
would you make the ruffle?

Yeah but I don't like watching videos. I did find how to make a few shapes.
Just not that one.

But it's not all the same. I said why. For one thing, that sort of pasta
doesn't work well in a pasta salad or with a chunky sauce. And it tends to
compress and stick to itself when leftover.

Melon is messy. It drips sticky juice and leaves me with rinds to dispose
of. Pasta isn't very messy at all. Neither are crackers and I make those
too. I've even made ravioli and potstickers. I have plenty of patience. I
just don't like having sticky juice dripping from my elbows, especially when
I have no interest in the food.

The first few years we were here, I canned apples and pears. Those were
indeed sticky and messy but there was a payoff in the end. Lots of jars of
fruit and fruit sauce. I just put on old clothes, tried to ignore the sticky
mess until it got too bad then half ass cleaned it up until we were done for
the day, then cleaned it up and took a shower.

Cutting a melon is nothing like that. My husband can eat melons faster than
I can cut them up and he has no patience whatever. For that reason, I
haven't bought any melons this season. I've bought oranges, peaches, plums,
grapes, cherries, berries and even a few pears although I am currently knee
deep in pears of my own. Both people who told me they wanted them, bailed on
me. Yes, I have to cut some of that stuff up but it is easily done. And not
a lot to dispose of.

I am not frightened of eggs. But they make me very sick to my stomach. Eggs

Maybe the questions is how slowly she cuts and how much he eats. I
cannot imagine someone being able to scarf down a piece of melon faster
than it takes to make a cut. Based on good she his at piling up the
bullshit, I would expect her to be fast enough with a knife.

He has been known to eat two entire melons and rapidly. I could not cut them
up quickly enough. He is trying to lose weight. Stuff like that won't help.
He is of the mind that if something is good for you or low in calories, then
you should eat a lot of it, provided that you like it. Just another reason I
dislike bringing melons home. He seems to eat other fruits at a slower rate,
but not always. I've had entire bags of cherries and grapes disappear before
anyone else got a shot at them. And sometime between when she bought it and
this morning, he ate an apple that Angela bought for herself. She didn't
hide it because he said that kind of apples (red Delicious) were disgusting
and he wouldn't touch them. This after those being the only kind of apple he
would touch. I can't explain it but I know she won't be happy when she comes
home. She only bought the one and took her time picking it out.

Even cubing melon takes mere seconds... maybe she deseeds his
watermelon too... or the low life skank eats and spits the seeds at
her and then she sweeps them up.

The honeydews I planted this year are doing beautifully, must be two
dozen huge beauties out there warming in the sun... I worry when the
sun sets that they may get a chill, it's all I can do to stop myself
from spending the night in my garden cuddling melons. It really
bothers me having to slice them... I agonize over having to pick them,
you'd think by now some horticulturist would've developed melons with
thick turgid nipples so I could suckle their sweetness on the vine.

Of course I was cubing it up. Which is not hard but messy. I hate drippy
fruit juice. And rinds. It's not like I can throw that stuff in the trash. I
can't. Has to be put in a Biobag and in my yard waste. Much easier to cut a
peach or plum in bite sized pieces or even to pit a cherry. Less sticky and
less to dispose of. Also much cheaper in the long run because he'll eat far
less of those than he will melon.

Julie, do you really think it's fair to keep posting disparaging remarks
about your husband? None of us have ever heard his side of the story, which
I imagine would be totally different, at any rate I'm sure you wouldn't
appreciate him doing the same to you. JMO

I'm to the point of not even caring. In case you haven't noticed, the
majority here are posting disparaging remarks about him and other family
members and they don't even know them at all! I also know that you have no
clue what sorts of things he does to me! I know that people here think I
post every little detail of my life. I don't. Not even close. But it also
seems that it doesn't matter what I post. Someone will say that I am lying,
making it up, etc.

Correct but it's not that much different to make than crackers. I know that
I did post about making the pot stickers before and yes, that was many years
ago. I also made heart shaped ravioli for a Valentine's day potluck and
square ravioli for my in-laws. My MIL told me it was good but it wasn't
Italian because Italians don't put meat in their ravioli. Of course we know
that isn't true. I've also made countless batches of noodles. I made them so
often as a kid that I didn't even need to refer to the recipe. And yes, I
put eggs in there then.

I did look at the Youtube videos but the only one I saw that showed how to
make this shape was using a machine. So perhaps this is out of the question
by hand. Looks like I may be stuck with Farfalle because using a pencil
skeeves me out.
