Default Spinach Quiche


Hubby has been asking for spinach quiche, so I made it the other day.
He found boxes of frozen chopped spinach on sale for $1 each, so I
used one. Grandson was here and helped. I squeezed the spinach as
dry as I could and turned it over to him - oh boy, was I surprised by
how much more liquid he squeezed out! The filling was simple - a
package of pre-shredded 4 cheese Italian mix, a couple slices of
crumbled bacon (which is more than enough for me, because I don't want
an overwhelming bacon flavor), mixed with eggs and milk.

Thanks for reminding me I have crumbled feta cheese in the freezer for
my next spinach quiche.

I am not a big feta fan, but one way I especially like it is in a
watermelon salad with mint.
