Couple of tablespoons of oil in a non stick pan, heat till just a little
smoky
fry two tortillas a few seconds on either side to make them just stiff but
not crunchy
discard oil
lay tortillas in pan and add salsa (or homemade ranchero sauce) to cover -
heat
crack a raw egg onto each
top with grated cheese
add 1 tablespoon water
cover and cook till eggs are firm
fold in half
