It had never occurred to be to do it until one night I was going to make chicken salad sandwiches for supper for me and my son when my wife was out. I had a nice fresh baguette and everything else that I needed ... except mayo. It is not something I ever used much of so I just assumed we had some. It occurred to me that it can be made at home. I looked up a recipe and gave it a whirl. It was incredibly easy and it tasted great. My son loved it. I have made it a few times since, but only at times when I knew there was a good chance of using it up. I did it in a blender. It's been a while but IIRC it was a matter of putting the egg, some lemon juice, mustard and salt and pepper in a food processor, giving it a bit if a whizz and then drizzling oil into it until it started making a flopping noise. It was more work to clean the FP than to make the mayo. |
