Default aluminium sauce pans

Having said recently I had Delia Smiths recommended sauce pan I saw
this today

http://www.deliaonline.com/equipment...-gem-sauce-pan

Have to say it's been great but mine is not shiny anymore, probably
the dishwasher but ask me how much I care!

I also have the frying pan mentioned there which does not go in the
dishwasher, it is well seasoned now and just gets a paper towel wipe.
If I remember correctly it was either the pan or frying pan which when
she recommended it saved a small manufacturing company from
bankruptcy. Ophelia or Sheila might know.

Otherwise known as a butter warmer, but it is a handy size to have.

It was an omelette pan. Within days of her mentioning it on a TV
program, they had to put on extra shifts in the factory.

I prefer a saucier pan. No corners fer roux to hide from the whisk.
Great fer making pastry creme (crème ptissière):

http://vollrath.com/Tribute-Sauciers-1816.htm

I use mine fer making coconut cream pie filling.

it in the nuker.

The saucepan is pretty much cornerless, a wooden spoon or spatula
gets it all easily.

You're showing yours now. My post was about butter warmers in response to
lucretia, nothing to do with your link. If it had been, I would have
responded to you and not her.

No kidding! It's right up there with All Clad.

I said a pan that size is called a butter warmer and now your panties
are in a twist.

The pan I was speaking about, for making sauces, is far larger. I
guess there are snobs though who want to spend stupid money on a pan
to 'warm' butter.

People who can only think of those tea light things when someone says
"butter warmer" doesn't have much cooking experience.

I'd heard of butt warmers, but not of butter warmers.

All-Clad too pricey? Buy Emerilware stainless pans, made
by All Clad...I have used mine since 2006 and they still act
like non-stick and look brand new. They are heavy and have
a copper insert inside the bottom. All-Clad honors the warranty;
I had to send one back because it had strange colored swirls
on the inside bottom, and I got a replacement, no charge,
immediately. They are all stainless, no non-stick coating.

Out of curiosity, I googled for Emeril by all-clad. Not much came up
that wasn't anodized and I wouldn't call what little ss I saw
inexpensive. When I bought all clad, I waited for a sale at BB&B and
used a 20% off coupon. That took it out of heart attack territory.

My butter warmer is a Pyrex measuring cup and 30 seconds in the nuker
on low... I do this all the time for air popped corn... scraped out
and stired with a silicon spatula. Much better than any of those
chemical laden microwave popcorns that STINK!

I bought 3 different sized sauté and frypans (including a deep, 2-handled lidded
chicken fryer) and a soup pot and 2 different sized sauce pans, with glass lids (my
preference) for $150, brand-new and in factory sealed cartons. During open
stock sales at a local department store, I bought a small, 1-quart sauce pan with
sloped sides. I love it all. Then I bought an identical set for my son and DIL.

My DIL melted a "nonstick" spatula in the smaller frypan and wanted to throw it out, but
I bought some Mother's Chrome Polish at the local Harley shop (thinking the stuck stuff
would be similar to some kind of rubber product that might be melted onto a cycle exhaust
pipe) and with a lot of elbow grease, I got it as good as new.

Thanks, nb, I will remember Simple Green and to heat up the pan first
if she does it again. I don't think she will.
