Default Making Salsa Last

I found a decent salsa recipe I like, but it only lasts a couple days in
the fridge.

How can I make it last longer?

Is there something to add that extends its life?
Does salsa freeze well?

It's a shame to waste it, but unless it can last longer we aren't able
to eat even half of it.

Very easy solution, don't prepare more than you can eat at once.
The fresh version lasts maybe three days in the fridge. The cooked
version will last a week in the fridge or can be frozen.
I much prefer the fresh version but only prepare a quantity I can eat
in one sitting. During summer when my garden is going well I prepare
about a quart each morning and it's eaten for brunch. I have no exact
recipe, depends on the harvest, but typically contains Roma tomatoes,
bell peppers, onion, garlic, parsley, sometimes Kirby cukes, and
whatever else I find. I grow various hot peppers but add very little
as I don't care for all that heat... most of my hot peppers are given
away, or I should say traded with neighbors who garden. To me salsa
is more of a salad than a condiment.

Actually I do, sometimes I eat more... you must be a very wussy eater
who can't eat a quart of veggies... I often eat a large can (28 oz) of
whole tomatoes as a snack. Tomorrow I plan on Chinese for lunch, I'll
fill my 3 qt pot with chow mein, will be enough for two lite meals...
it's to use up the last of the eyeround, julienned.

It's not a lot of food for me, I work hard all day every day... today
I hooked my cart to my tractor and pruned two huge crabapple trees,
filled the cart 3X and dumped all the branches way out in the woods,
and it was cold, and had to gather the tools and then put them back...
took me six hours, and worked up quite a sweat. That's only a small
fraction of what I did today. I', out of bed before 5 AM every
morning an dput in a good day's work before the sun is up taking care
of all the cats amd other critters. I got two loads of laundy going
and started dinner and was still dark out. I've been working all day,
only just a half hour ago logged on to my PC, after washing all the
dinner dishes by hand. I don't slouch in a sofa all day sucking down
bonbons like you, couch potato... what's the most exercise you got
today, wiping your ass. . . . and I'm still doing laundry, winter
coats for me and winter blankies for the cats, I don't get into bed
until after midnight and up again before 5 AM. A quart of salsa is
not a lot of food, raw veggies contain little calories, if you ate and
worked like me you'd never need to diet.

Why is someone who eats little "wussy"? You take pride in eating
a lot, and denigrate anyone who does not.

People who work at a desk are as worthy as someone who works
physically. Without desk workers, you wouldn't have an Internet,
nor a computer to post to it. Sophisticated medical diagnostic
equipment. Anti-lock brakes. Spy satellites and other
surveillance equipment to tell us what the PRC is up to in the
South China Sea.

All of your physical work is just a hobby. I'm glad you enjoy it,
and it's good that your lifetime of hard work has afforded you a
comfortable retirement. But we'd all appreciate it if you would
stop with the self-righteousness.

Now that I've gotten that off my chest, I can say that I don't expect

He is who he is and aint gonna change. I laugh when he says it takes 2
3lb chickens to feed one person. He hasn't done that lately but he
used to get all bent out of shape when the 3 of us here had leftovers
from one 2.5-3.5lb chicken.

Lunch today was 1 pint vegetable soup, one slice of multigrain
bread (drizzled with a bit of olive oil), and 1 ounce of
cheddar cheese. I doubt he'd consider that a mouthful, but
I'm actually a little uncomfortably full.

A reasonable meal to me! I just had a big meal (I tend to larger
lunches, smaller dinners). I've taken the day off just because this
next month is really heavy schedule including trip to Falls Church
(about 7 hour round trip). Today was a day I could spare out to have
an extra break so did it.

Had 1/2 a sandwich with pulled pork and white cheddar (no dressing
needed, home made bread a little bigger than 1/2 supermarket bread
would be) and with it had a tomato and basil soup (about 3/4 cup) and a
kiwi. Slightly overfull but nothing terrible.

I can't take those comments seriously, a quart of diced tomatoes is
not a lot, especially when that's the entire meal... it's better than
90% water... certainly more healthful than a couple cans of diet Coke
with a tube steak. I eat a lot of raw veggies, no doctor has ever
told me salads were bad for me, in fact they recommend I eat all I
want.

That is a decent lunch, it would sate me...but I can eat huge amounts of veg, a quart of salsa or whatever would be no problem (without any added carbs, fat, or protein).

[The amount of what Sheldon mentioned he ate on that particular day would probably seem parlous to an olden times farmer, they had to ingest huge amounts to fuel all that energy they expended...]

Pringles CheezUms slipped out of my k/f so must have changed ISP' or
otherwise shifted. At one time years ago he kept ranting about how they
don't serve Dr. Pepper (or was it Pepsi?) at The Cheesecake Factory. I
remember thinking "Who gives a crap?"

At least Sheldon gave a reasonable answer even if the OP is a troll.

Goes with the sign I posted at my chow line:
"Take all you want, eat all you take."

That's why I always use that same covered casserol dish whem I prepare
salsa for myself, because I know filled about halfway is what I can
eat at one sitting. Tonight's dinner will be a garden salad, I
already have all the ingrdients prepared and in the bowl, I know that
size bowl (24 cups) filled halfway holds enough for two, filled
halfway so there's lots of room to toss with dressing. I learned long
ago to use particular cookware as a gauge for particular quantity. I
prefer to use larger cookware so there's room to stir without making a
mess.
The salad veggies have already been drizzled and tossed with a bit of
vinegar to retard spoilage. I'm not sure yet which dressing, bottled
or homemade... with two of us I'm not who chooses the dressing. When
just me the salad would contain a substantial quantity of raw onion,
otherwise none. When home alone I typically prepare a basic
vinegarette. In summer when the garden is going we eat salad often,
then I'll prepare enough salad for two dinners... often I'll add
pasta, beans, both. We enjoy raw veggies, this is a typical winter
salad for two dinners:

Why not, it's not dressed... the produce at market was prepared weeks
before you bought it, that's when it was harvested... and I _planned_
on eating it 24 hours previously. And now I'm going to put up a
quarter pound of rotelle to add to tonights'.
