Default Cupboard Confidential


Dang it, I knew I had the ingredient I needed for the recipe in the
cupboard somewhere. A few hours later, a big mess and now a cleaner
better organized cupboard I found it. Yippie Skippie
Fortunately that was my only disorganized cupboard.

Here's the recipe that started the whole mess in the first place.

Cochinita Pibil.

CATEGORIES meat, Mexican
INGREDIENTS

Cut 8-10 pounds of Boston butt into 2" cubes, sprinkle with salt and
pepper.
Mix together:
achiote paste, 2-3 boxes
1 tablespoon Mexican oregano
1 teaspoon cumin
2 to 3 cups (total), orange juice, lime juice and pineapple juice
garlic, to taste
2 to 3 sliced onions
Banana leaves, optional
INSTRUCTIONS

I placed these ingredients in a jar (not the pork, onions, or banana
leaves) , I used a stick blender to mix well. Pour over the pork
chunks, add sliced onions, mix well, cover and refrigerate 12-24
hours. Line your pan with banana leaves (they say it is best to pass
the leaves over a flame, both sides, first). Cover the pork with
banana leaves, then aluminum foil and bake at 325(F) for about 4
hours, or until tender. When done, shred the pork and stir the
shredded pork in the marinating/cooking liquid. Taste for seasoning.
We eat these as tacos on corn tortillas and we top them with pickled
onions, cilantro, avocado slices.
Note: if you do not have banana leaves, just omit the banana leaves,
cover the pork with aluminum foil and bake.
NOTES

This recipe is approximate, so feel free to change it to suit your
tastes.

Remember the good old days when a space rack was about 6" long and held
salt, pepper and a couple other herbs and spices, which was all most
people used.

I had the same corner cabinet dilemma. Doesn't need to be a dead
space, access that space from the joining corner cabinet... if boarded
up cut away that board between each shelf, for strength leave a radius
at each corner... keyhole saw... now you have a project.

This is a very handy saw, well made, and inexpensive... I find mine
invaluable for pruning tree branches in tight places... pruning should
be done with a saw, not with loppers. Loppers damage the surrounding
bark so it takes a lot longer to heal and permits insect entry.
Loppers are good for cutting up branches after sawing, and for cutting
away much of a branch and then saw the last few inches next to the
trunk. Most hardware stores sell this tool so save shipping:

We have a cabinet that goes diagonally between the two corner cabinets. It looks pretty but has dead spaces on the left and right. Evidently, you have hard to see spaces no matter which way you go. I like the idea of lower, open, naked, shelves.

I'll have to check out the achiote paste. We have the achote/annatto/alaea/lipstick plant over here but it's not used in Hawaiian cooking except for pasteles/pateles and pastele stew. Pastele stew is a deconstructed Puerto Rican pastele and is a local creation that's getting to be popular. My guess is that it'll be standard Hawaiian fare in a few years.

They do! If I were to ever move from this house and was able
to design my own kitchen I would have another lower cabinet
lazy susan. Upper corner cabinets would also have one.

I've got 3 of those but mine are 'single story.' The
double decker ones were a bit too tall to store much of

Good one.

My current kitchen has no corners where a row of cabinets meets another
row of cabinets at 90 degrees. Everywhere it might happen, there's
a door interrupting a row of cabinets.

I hear you, my kitchen is similar. Anywhere upper cabinets could meet
is some sort of a space. I have two regular doors, French doors, a
huge window, a breakfast nook and an old fashioned furnace flu that I
figure the next owners will remove when they gut the kitchen and
completely reconfigure it to make a more logical cooking space. In
the mean time, I've learned how to cook in the layout I have (without
leaving a water drip trail on the floor) and don't care anymore.

True, but I did like the corner cabint I had once. And I do still have
Rubbermaid double decker type lazy susans. My fomer kitchen wasn't large
so I did the best I could with fitting jars of herbs and spices into
fairly small cabinets. Using Rubbermaid Lazy Susans.

I no longer have a corner cabinet. But I do have several lazy susans.

That's what I do too. Add lazy Susan's, some racks with dividers
for the cabinets to use all of the space, lots of storage
options.

I have the single story ones too. I wouldn't want upper cabinets with
carpenter installed permanent lazy susans, I like that they can be
easily relocated and are easy to remove for washing in the sink. I
use mine for my spices, the often used ones on the lazy susan, the
rest in taller bottles in the dead spaces in the corners. Even though
they are plastic they've so far lasted more than 30 years, I paid
maybe a dollar each back then. I know where everything is located,
and all in different shaped bottles, I could find them were I blind.
No one but me touches anything in my kitchen, I do all the cooking. My
wife has an electric tea kettle to boil water for tea and hot
chocolate, she uses the microwave and bread toaster, never the stove.

I use lazy susans on my cabinet shelves, but I doubt they would fit
inside the 12 inch deep stock cabinets of today.

Why?????? My lower corner cabinet has a two story lazy
susan and I love it. It keeps me from get down on my
hands and knees and digging for items that would surely
get pushed to the back of regular corner cabinet.

Mine is a kidney shaped lazy susan and the door is attached
to it and turns with the shelves. Some lazy susans the door
has to be folded out of the way to access the shelves.

I've never seen the plantain dumplings but it does seem interesting. Most of the time, the grated plantain/banana is just mixed into the stew and thickens the dish.

Not odd, she hates cooking. When I was dating the first question I
asked was do you like to cook, if she answered yes there was no second
date.
I don't touch her vacuum cleaner.
I don't touch her knitting stuff,
She doesn't touch my fountain pens.
I don't touch her makeup stuff.
She doesn't touch my shaving stuff.
We each have our own toothbrush.
We respect boundaries... without boundaries marriages fail.
