Default Cochinita Pibil


This is definitely a keeper.
Pork cooked in a nice mild chile sauce. First meal was served over
rice and the next meal it was made into tacos. Deeeelicious.

Koko... your recipe sounds great and the pic over rice the same.
The taco pic looked a little plain to me but I'll bet it was
delicious. I might have added a few bits of fresh tomato to it.

I like the fact that you use lots of onion. I like lots of onion.

You have caused me to try some new things, which have been really good. I
will try this, and not too spicy is great for me since I don't like a lot of
hot type spice. Have a great Thanksgiving koko!
