Default Kampot red peppercorns

I picked up a small bag of these red peppercorns during my recent

Went to a pepper farm near Kampot, Cambodia. It was quite interesting
to see how they are grown, and especially the amount of time and
effort that goes into selectively harvesting and hand sorting each and
every peppercorn. They earn every cent they get, that's for sure.

Kampot is known to have amongst the best peppercorns in the world,
apparently Anthony Bourdain did a show on them (which I'm currently
downloading via bittorrent).

At best, only about 20% of the peppercorns ripen to red, so they're
the more expensive ones and also happen to be my favourite type.

(One thing I miss already is that a lot of Cambodian dishes use fresh
green immature peppercorns still on the stalks, they are really nice
and have a different flavour from what you would expect).

Anyway, I'd be interested to know of any good recipes specifically
using red peppercorns, such as a sauce for example. I'm currently
looking through some but not finding anything that particularly grabs
me. Then again... this sounds alright:
