Default Yesterday's bread

Finally got a decent camera. Photobucket seems wonky just now so made
a tinypic for ya.

Recipe used as follows (makes 2lbs, I did a freeform loaf and about 10
smaller buns)

1 1/3 c Buttermilk (made from powder and water)
1/3 c water
1-2 TB butter (cut up)
1/2 c hard strong cheese, slivered *
1/3 c firm brie, cut up
4 c flour (mix of all purpose and bread machine, probably 1/4c spelt in
there)
2 TB sugar
1 ts salt
2 ts bread machine yeast

**optional- 3 TB parsley, 2 ts black pepper blend, 1/2 TB poppy seed

Set machine to dough mode and load. I used the first 2 optional items
right away then waited until after first knead to add the poppy seeds
so they'd be in the outer crust. Remove from machine in 1.5 hours
(when it beeps it's done with dough mode) then shape. I used about 1/2
the dough for a long loaf and then made quite a few smaller buns. Set
on a large flat bread pan (I use pam so it doesn't stick) and place in
the oven with the light on. Let rise about 1 hour then remove, heat
oven to 400F and bake 17 minutes and check. If a tap is hollow, it's
ready. I actually do it by color for this recipe but if unsure, the
hollow tap works.

* For the cheese, sorry this one was long unwrapped and not sure other
than it was firm, pale tan inside, and probably was similar to a smoked
gouda yet firmer. Pretty sure at some stage it had a wax rind that's
been peeled off.

Yes, this time it did, before just the bread. Don't know why. I think your
kitchen looks very cozy and that it's used for cooking and enjoying it. It
reminds me a lot of mine.

Ah thats good then! I've since made tomato sauce with a meat
background and the remaining bits are in the crockpot (small one you
see on the counter). It would be amusing to show bits shift about as I
chopped and cooked. The main chopping space is before the microwave
(most accessable).

You may think it's cozy but I think it's way too cluttered, what's
with all those small bottles everywhere... there's plenty of space on
those empty walls for for storage cabinets, can even add more counter
space with cabinets below. That ancient fercocktah piece of furniture
looks out of place and takes up a lot of space that would be a lot
more useable. One can only imagine what useless dreck is stuffed into
all those cabinets... I think you need to have a yard sale, or rent a
large dumpster. How/why do people live that way... I'm positive if
someone built you a new kitchen three times as large it would be just
as crammed full of useless dreck in a week. I'd be ascared to see
pictures of shenk's terlit.

For Gawd's sake give it a rest. All you do is criticize everyone who posts pictures of their kitchen and what they cook. We all know that you are frickin' perfect and have standards that no one else can ever attain. If you really want to criticize, I could post a picture of mine. That would probably cause you to have a "stroke". Hmmmm!, maybe that would be the ticket.

From your choice, I can tell you're an extroverted, forerunner type. My choice means that I keep things low-key and am pretty conservative. Our choices in bread says a lot!

Exactly, you can live how you choose, as can others. Did you see that some

your kitchen, but if I hated it, I wouldn't write a long winded reply about

I didn't say I hate your kitchen, all I said is that's it's too
cluttered for me, I wouldn't want to be dusting and wiping down all
those jars/bottles... how do you extrapolate hate from cluttered?
Actually your kitchen is fine, but I would find out of sight places
for all that stuff... there are very nice recessed cabinets that can
be inserted between the wall studs so that they are flush with the
wall... they can be mirrored, have clear glass so you can see what's
inside, or insert your favorite art work. Just examples:

LOL! The only empty wall space is above the added floor cabinet. Much
of that is in use with 6 wall mounted spice racks.

LOL! Wich one? The flip down side table doubling as a low credenza
(piled with special additives my elder dog needs such as GSM for her
joints, Lignan for her Cushings-like symptoms and so on). If the
pictures didnt show it, that is a narrow 28inch slot leading to what
was the garage. I'm not cabineting off the family room entrance.

The low unit with the bread machine and crockpot? Probably not in view
is the onion and potato keeper that is between it and the china cabinet
(full wood door).

The China Cabinet? Genuine antique. Made in England and rounded the
tip of South America to land in San Fransisco and used in the gold rush
in bar. Has burn marks from the fires after their big earthquake.
Was a matched piece and we have the pictures of the other one that
didnt survive the fires. It's against the sliding patio door.

What you may not have realized is there is a pantry to the side of the
fridge. I use that for most dry goods. The spots above need a small
step ladder to reach but have those bigger pans we all use for special
things like a whole Turkey, or my covered Duck roaster.

The rest is open to the living room. Att he edge you may be able to
see the built in bar (kinda messy with stuff on top right now.

Grin, go for it! Remember, the rest of us normal folks will just like
to see it and if you have a problem spot and looking for ideas, will
suggest what *seems* might work for you.

One problem here was getting at my spices. You can see my solutions
and if you have wall space, those nice looking sort of antique black
wall spice units were not expensive, were well made, and come in packs
of 2. They come with long screws and he plastic countersinking bits, or
short ones just right for drywall (no deeper than the drywall and
strong enough for standard glass spice bottles). The long screws and
counter-sinks are for brick/stone mounting.

Um Sheldon, I cant get more than 3 inches with recessed stuff here or
it's 'outcessed stuff' in the wall of the other room. The back side of
the wall with the fridge is the kid's bedroom. The wall with the sink
is load bearing exterior wall supporting the roof and the once carport
became enclosed garage (lower roof) and now family room.

Oh don't let him worry you. Mine *is* cluttered with real life. It's
obviously arranged for real cooking and has challanges in storage. I
LOVED the wall potrack that was posted and I'd do that here but the
only possible spot would be to remove my cookbook bookshelf set and use
that wall (leads to the family room). Humm, it's an idea but a lot of
my pots/pans are not hangable and the lids are not but there are some
possible ideas there...

Best hidden secret of my kitchen? There's a 5 inch wide cubby with
door at the side of the dishwasher (other side is the thin passage to
the Family room). *Perfect* for cans of dog and cat food. Has 2
shelves in there.

Since I make bread twice a week, I don't post them all. It would be
silly! Glad I got the new camera though! The old one works nicely for
a child to click around and went off to one a week or so ago (after
explaining the color issues to the parent).

I find myself agreeing somewhat with Sheldon, although I'm more

How tall are you? I can see wanting stuff low if putting
things up might mean a trip up and down a stepladder for
every little thing, especially if infirmity precludes

Open spice racks are a big no-no, light destroys spices... spices
should be stored inside a closed space... a spice *cabinet*.
I keep my spices inside three adjoining kitchen cabinets, containing
small bottles that I refill as needed from the stash in my freezer.
Several spices that I don't use very often are in small bottles in my
freezer all the time, otherwise they'd deteriorate before I used them.
And just because you display all those spice bottles in no way means
you use them... they are simply a huge shitload of schmutz
collectors... you'd do better to use those racks to display Beany
Babies or other chachkas. None of my spices are displayed, not even
my salt and pepper. In my experience over many years those who
display all their kitchen stuff don't/can't cook, it's all a facade. I
was at someone's house recently, they had a ton of pots n' pans
hanging from the ceiling, walls, everywhere... I checked a bunch,
every one was coated with at least ten years worth of schmutz. I've
been offered a drink at people's homes who keep all their glassware
displayed on a counter, I looked at those dusty glasses (some with
obvious mouth marks on the rim) and refused, I certainly wouldn't eat
there. Ever I saw a kitchen with all those spice bottles displayed
out in the open like Carol's no way would I accept an invite for a
meal... all that dreck all over her kitchen whets my appetite like an
unflushed toilet. I don't care that a kitchen is small or old
fashioned so long as it's scrupulously clean, disorganized and
overflowing with dreck is no indication of cleanliness. I just want
to see the basic kitchen *layout*, not all the displayed appliances
either, displayed appliances over all the counter space tells me
they're not used other than to cover up schmutz, they're all show and
no go.

That is one ugli piece of furniture that matches nothing in your
kitchen and is a total waste of useful kitchen space. I'm positive
it's not filled with canine meds, your Vet doesn't need that much
space for animal meds.
I used to have an entire dining room set from the 1920s that sat 12
people, with the hutch, sideboard, credenza and all the chairs, huge
pieces, very ornate... was too much work dusting and polishing and I
don't think I ever had more than eight for dinner at that table... I
got rid of it, I sold it with the house.

It's genuine ugli, doesn't belong in a kitchen, takes up too much
space, belongs in The Munsters Museum.

Thank you, Cindy. I can be sympathetic when one says they can't
afford a remodel, but then it would behoove that they stop talking
about it endlessly. Yet still there is much one can do to greatly
improve what one has without spending much money... it never costs
much to organize, neaten, clean, and to free up space by disposing of
dreck one doesn't use. I know that there are people who just can't
bring themselves to dispose of their errors in judgement, some people
are impulsive and always think they need something, if only they'd
wait an hour to think about it they would come to the conclusion that
purchasing some frivilous doodad is just a big waste of money, but
more importantly will become a burden finding a place to put something
they'll never use.

Small kitchen appliances that are occasionally/rarely used don't need
a permanent home in one's kitchen... they can be stored in some other
room, on the floor of a bedroom clothes closet or under a bed... I
know, Carol has 170 pair of shoes she hasn't worn in thirty years but
she can't part with any even though now are feet are way too fat. I
recently bought a very nice metal cabinet that I mounted on my garage
wall for storing bakeware, I have a lot of Nordicware... it's only a
few steps from my kitchen to my garage... Nordicware is bulky, they
don't nest, no point in it taking kitchen space when pieces aren't
used regularly.
Lack of storage space is why houses with no basement are not houses,
every house on a slab is a garage. Anyone who pays over 100 Gs for a
house on a slab is an imbecile.
