Default Sweet potatoes

I notice they are often mentioned as being roasted. Does anyone peel them to
cook in other ways?

I have boiled and peeled them to make sweet potato pie. Though I haven't
made them, I have eaten sweet potato casseroles - some with maple and pecan,
some with marshmallow. For the most part, the only sweetened sweet potato
dish I care for is sweet potato pie.

My preferred way to eat sweet potato is baked, served with butter and
cinnamon - no sugar. A variation is medallions; cut sweet potato rounds
about 1/3-1/2 thick, coat with oil, a sprinkle of salt and place in a single
layer on a sheet pan and bake until tender (about 25 minutes at 400F). I
prefer to lay them out on a rack in the sheet pan; heated air can flow under
as well as over and around, cooking them evenly without having to flip them
halfway through. Most people peel the sweet potatoes before cutting into
medallions; I do not. I prefer skin on, as that is where a lot of the
nutrients and fiber are found When roasted skin-on, the medallions are a
bit less attractive, because the flesh shrinks a bit and pulls away from the
skin.

When you say 'boil and peel' do you mean you boil them before you peel them?

I have a recipe to oven roast them with other veg. I wondered about peeling
them first. They are quite small.

Thanks)

Ahh I've only ever baked them and I have a recipe to oven roast
them (with other veg) with a maple glaze.

The ones I have are quite small and I had wondered about peeling them.

Thanks

To boil, you boil them whole to done then peel the skin off.
To oven roast, you roast in the peels, then peel them or...some people
eat the peels, I don't.

Hmm thanks Gary but I am not sure that would work for this recipe. It is
mixed veg with a coating of maple syrup etc and then roasted.

Not sure I would want to start pulling to peels off and I don't think I
would want to eat them either

For sweet potato pie, I boil first then peel. After boiling, the peel
pretty much slips off. Usually, I just cut in half length-wise and scrape
out the flesh with a spoon. Damage to the pulp is not issue since it is to
be mashed to make the pie filling.

I had them once or twice in a couple of different restaurants. I wasn't
impressed. When it comes to fries, give me regular old russets. Still,
if you look in the freezer section at the grocery store you can even
find sweet potato tater tots!

They aren't horrible. They aren't great. They tend to be mushy.

We love to use purple sweet potatoes for pies on this rock. I guess we're weird.

I like them quite a bit. When I have them at home, I sprinkle them
with powdered chipotle chile. That holds for roasted sweet potatoes
or previously-frozen fries. I haven't tried the tots yet.

Most times I peel them, add butter, salt and pepper, wrap them in foil and
bake...not for me, but for dh.

Root vegetables do best roasted. My Actifry makes it real easy to roast to
perfection. I recently have been using ground ginger to spice.

The skin is also where the anti-nutrients are. The plant needs some barrier
to discourage worms and the like from eating it.

Yes. I have tried them. The problem is freshness. Before they are served to
us they sit around for a while. And the texture isn't the same. When I
roast in my Actifry (a convection oven that tumbles them with a small
amount of oil) I eat them immediately after they are done.

It's your choice. The peel is edible.

I sincerely doubt you'll be able to find sweet potaoes that are sold in
Hawaii. Heck, I can't even find those and despite what he thinks,
Hawaii *is* part of the U.S.
