I got a Cabela's meat grinder and two brand new, crisp one hundred
dollar bills for Christmas. Now I can go Cash and Carry and get some
big hunks of meat to grind.

Is Cabela's still around? I see a website. I thought Pro Bass bought
'em out.

What I hear is that Bass Pro Shops will keep the name on the Cabela's
stores. A sales person strongly intimated that there are going to be
some great sales after the new year.

Should have enough power to do a good job. Looks like easy to clean.
Making sausage is fun too. You can use a basic recipe and customize it
to your liking with less salt and fat. Pork butt and picnic is good.

I'm glad to hear that. There are many sausages that I don't eat
because they are so salty and become unpleasant. Thanks for the

I know! I'm really looking forward to this. My brain is going to
have to get in gear. I got a Roku (device for streaming TV/movie
content), a nifty pair of headphones for my cell phone and an external
drive for my computer. All have instructions (or recipes) for things
I've never done before. Altogether an exciting time ahead.

Yes, some of us appreciate things like that. My wife was given two
pounds of bacon and two stuffed chicken breasts. Sounds odd to most
people but we really will enjoy them as an easy to prepare meal on Tuesday

Making cured sausage it is critical to get things right. Making fresh
sausage like Italian or breakfast is fairly simple as it is just ground
meat and seasoning. ''f you are playing with salami or other dry cured,
no room to play around with wrong quantities on nitrite nd nitrates.

I'm not familiar with Cabelas, but I sprung for a LEM grinder a while
back, http://www.lemproducts.com/product/i...-bite-grinder-
5/butcher-meat-grinders (also sold at Bass Pro, I'm told). It's like
twice the price of the Cabelas, but it's a beast. All metal
construction, heavier than hades, and with the design of the auger, you
don't even need to pre-chill the meat. If I'd known about the Capelas
products, I'd have taken a look at them, but I don't regret my LEM
purchase. As Sheldon preaches, grind your own and you know exactly
what's in it.

BTW, I highly recommend a foot switch if you're stuffing sausage. It's
difficult, at least for me, to get a proper consistent firmness in the
casing without one.

Yes, some of us appreciate things like that. My wife was given two
pounds of bacon and two stuffed chicken breasts. Sounds odd to most
people but we really will enjoy them as an easy to prepare meal on Tuesday

I'm not familiar with Cabelas, but I sprung for a LEM grinder a while
back, http://www.lemproducts.com/product/i...-bite-grinder-
5/butcher-meat-grinders (also sold at Bass Pro, I'm told). It's like
twice the price of the Cabelas, but it's a beast. All metal
construction, heavier than hades, and with the design of the auger, you
don't even need to pre-chill the meat. If I'd known about the Capelas
products, I'd have taken a look at them, but I don't regret my LEM
purchase. As Sheldon preaches, grind your own and you know exactly
what's in it.

BTW, I highly recommend a foot switch if you're stuffing sausage. It's
difficult, at least for me, to get a proper consistent firmness in the
casing without one.

Ed, the Tuckaway isn't very far from me in NH. Do you live in my area? I've only eaten there once, their meat dept and store is pretty nice.

Share your recipe for pork/apple? I hadn't thought until I got to
reading the manual that I can now smoke my own sausages since we have
a smoker and it came with a sausage hanger.

My husband always likes to see and sample kitchen toys immediately, so
it will have to be plain old ground beef for hamburgers.
We'll have to get shoveled out of here first and put the vehicle in 4
wheel drive and get cat food. I would say that my little section of
the city got about 18 inches of snow over the last couple of days. Our
little maze of cul de sacs doesn't get plowed by the city. Getting the
cat food will be easier than going farther to get big meat.

I know we will enjoy the burgers -- occasionally I would run chuck

I would love to get something like that for a present. We usually get
a box of tamales. There are some things that are enjoyed more if you
don't have to make them yourself.

My pork and apple sausage is very simple. I mince (grind) the pork
(shoulder or butt you say I think), apple and onion all together. You can
add whatever herbs and seasoning you want to that)

I don't measure, but thinking about it, probably one part pork to 1/4 onion
and 1/4 apple.

You will find your own preferences by ta daaaaaaaaa ... experimenting) I
LOVE to experiment and I bet you do too)))

I love new equipment and I just know you are going to have a great time
