Default Red Chile Pork Tamales


Woo Hoo Tamales done!!!
I used the masa spreader that I bought a long time ago. At the time I
bought it I felt like I had "sucker" written across my forehead as I
checked out. O.K. I'm so happy I was a sucker for it.

my goodness, that is surely a large pile of masa in the video.. The
tool reminds me of something used to apply mortar or grout. I can see
where speeding up this one step would make tamale production a lot
easier. Did you make about 2 dozen tamales? I like red chile pork
tamales . Send any leftovers to me, please.

That looks just scrumptious. Red chile pork filling sounds like a terribly good idea. That little gizmo seems like a wonderful time saver. I can probably just buy a squeegee from the hardware store though. One of these days, I'll make those things. We'll probably use green bananas for the masa - we have tons of green banana around here. Thanks!

Oh wow, that spreader thing is such a simple yet clever solution to making
consistent tamales. I LOVE tamales, but I know they can be quite high in
calories, so they're a treat for me. Seeing that video and the tool looks
like it's something I could probably try to do at home...

I remember that video! She does make it look easy and I've
made them once using an America's Test Kitchen recipe and an
offset spatula to spread the dough.

Just to be curious I added her spreader to the shopping cart
on the that site. It was $7 but $8 to ship it.

I make tortillas using plantains so the bananas might work for the
masa.

I just checked eBay and they have it for $9.99 with free shipping.
There was another model for sale for $2.49 but $8.00 shipping.

There's a Mexican market 4 or 5 miles from me and I'll have to
stop in and see if they have this in stock.

I agree that tamales are a treat. Since I have all the fixens I'm
makiing more to freeze. I'll be making more pork but this time with
green chile. My friend gave me some venison he canned so I'll be
developing a recipe for venison tamales.
The masa spreader is really easy to use but it does take a few tries
to get it right.

I think it's still worth it for the speed and convenience, I whipped
right through the husks like lightening. I was kind of disappointed I
wasn't making more because it was so much fun to use.

Mostly we have bananas here, not plantains. Oddly enough, pasteles are popular in Hawaii. It's the Puerto Rican version of tamales except that the masa is made from bananas or plantains. We make a deconstructed stew from this dish called "patele stew." You won't find this dish anywhere except Hawaii..

The masa spreader is not totally flat. It has what I call "skids" on
the sides to elevate it from the surface. Watch the video, she shows
it.

I would cut down on the cumin and oregano - that would make it taste too much like chili. Some recipes don't use either.

That's probably good to have but I have some experience with spreading goop on flat surfaces so I might not need the skids.

Thank you, I noticed that some don't use them. I'm probably going to
use the ingredients that are common throughout the recipes, that make
it a true pastele and take it from there. I'm sure there are as many
variations of it as there are cooks.

My late MIL used to make huge quantities of wonderful tamales,
plantain leaves filled with chicken and masa in a luxurious spicey red
sauce.
