Default Loaded Banana Bread


I'm not usually a banana bread fan but I had some bananas that needed
to be used so I made some banana bread, and am I ever happy I did.
So moist and decadent and totally Paleo and grain free.

I didn't have the dried cherries or cranberries so I added some fresh
dates that I choopped up instead.
I tossed them in some almond flour before I added them so they
wouldn't sink to the bottom.

THE ZENBELLY COOKBOOK
Loaded Banana Bread

YIELD 1 loaf ACTIVE TIME 10 minutes TOTAL TIME 50 minutes
INGREDIENTS

1 1/2 cups mashed very ripe bananas (about 3 bananas)
3 large eggs
1/4 cup palm shortening or softened unsalted butter, plus more to
grease the pan
1 tablespoon vanilla extract
1 1/4 cups almond flour
1/2 cup arrowroot powder
2 tablespoons coconut flour
1 teaspoon baking soda
1/4 teaspoon finely ground sea salt
1/2 cup finely shredded unsweetened coconut
1/2 cup chopped raw pecans
1/4 cup cacao nibs or mini dark chocolate chips
1/2 cup dried cherries or cranberries

INSTRUCTIONS
Preheat the oven to 350°F. Grease a 7-inch loaf pan.
Combine the bananas, eggs, shortening, and vanilla in the bowl of a
food processor or high-speed blender. Blend until well combined, about
20 seconds.
In a large bowl, combine the almond flour, arrowroot, coconut flour,
baking soda, and salt. Pour in the wet ingredients and stir to
combine. Stir in the coconut, pecans, cacao nibs, and cherries.
Pour into the prepared pan and bake for 50 to 55 minutes, or until a
toothpick inserted into the middle comes out clean.
Allow to cool before removing from the pan.

NOTES
I’m always on the hunt for the perfect portable breakfast bite.
I know that sticking with whole foods such as meat and veggies is a
better nutritional choice, but once in a while, it is both convenient
and necessary to have a filling, nutrient-dense, and satisfying
breakfast in the form of a slice of bread. This is exactly that. The
bananas are sweet enough that no additional sweetener is required, and
there’s plenty of texture and contrast of flavors from the nuts,
coconut, cacao nibs, and dried fruit
