OK, I made it but it is really my wife's way. It has been quite a while
since we had it this way. Most times I season the parts and stick them in the oven until done. Easy. This takes a few more minutes more. We used bone in thighs but other parts work too. Mix together: flour, salt, pepper, paprika, garlic powder, other seasoning of your choice. Put the mix in a plastic bag Put one or two pieces of chicken in the bag and shake until coated' Heat a large pan with Crisco, enough to be about 1/4" deep. Heat hot enough to fry Put the chicken parts in the pan and cook on medium high until crispy, turn and do the other side. If not cooked through, turn again. If you are doing more pieces than will fit in the pan, you can finish them in the oven. Just cook until the outside is crispy and transfer them to a pan in the oven. We enjoyed it |
