I used Genoa salami this time, rather than proscuitto as NB does,
simply because I prefer it.

Looks great! Glad you enjoyed it.

Use any meat. Or no meat. I've even used a vegetable base, instead
of my usual beef base. I now use hard salami instead of proscuitto,
anymore, mainly cuz proscuitto is rather pricey and I'm so cheap.

So, play with it! Dog knows, I have.
