I've never been able to figure out why the diabetes rate in Hawaii
is only 8.5%. Everything they eat appears to be simple carbs.

Indeed it is. The young folks think it's the greatest thing since sliced bread. It is big slices of Japanese bread that's been brushed with butter and toasted in the oven or fried on a griddle. It is then drizzled with honey and served with sliced banana, chocolate syrup, fruits, nuts, and practically anything. I've had it. It's pretty much toast. If you eat too much of the stuff, it'll probably kill you.

I make whole wheat toast pizza every other weekend, 2 slices for lunch and supper on sat and for lunch on sun, 6 slices total.

It's an interesting idea. We are able to control heat to a fine degree and our vessels are so well crafted that burning, scorching. and charring, is seen as the sign of a junior cook. That's the breaks.

The advent of the automatic rice cooker meant that we no longer got the scorched rice on the bottom of the pan. The old folks would eat that crusty stuff by pouring tea over it to soften. These days the old folks don't get any of that stuff and the young folks have never heard of it. The Korean mart that we went to on the weekend had bags of scorched, crispy, rice. I suppose you eat it like a potato chip. Interesting.

Tonight I had stuffed bitter melon. It was OK but not quite bitter enough for me. Perhaps I cooked to too long.

timed. I have never scorched rice...ever. Not white or the brown that

You must be lucky in the extreme. I used to scorch the rice all the time before our family got an automatic rice cooker. My recommendation is you try out your luck in Vegas.

Asian cultures will be quite familiar with this stuff. Perhaps white folks are incapable of burning rice. That's OK, I can't make mashed potatoes so I'd call it a fair trade.

Or something. I cook my rice the way a Chinese cook taught me and the
way most of my Chinese friends do, a couple have rice cookers but the
rest use the saucepan method.

There is no luck involved. Use high heat to get it boiling, then turn
it down to low. You don't need the burner to be any hotter than what it
takes to keep it at a low boil.
