Default Corn Doodle Burgers

I was feeling a tad nostalgic last night so I made Corn Doodle Burgers.
Mom cut this recipe out of some woman's magazine in the early 1960's.
(It's not for people who are on low-sodium diets, but was anyone on a
low-sodium diet in 1960? Rhetorical question.) The original recipe
called for "Dipsy Doodles" corn chips made by Wise. I haven't seen
Dipsy Doodles in decades; I used Fritos corn chips.

Corn Doodle Burgers

1 16 oz. can salmon
1 c. crushed corn chips (Fritos)
2 eggs, lightly beaten
2 Tbs. sour cream*
1/4 cup minced onion
1/2 tsp. pepper
oil for frying

Drain salmon (remove the round bones if they freak you out) and mash it
well. Add crushed corn chips, egg, sour cream, onion & pepper. Stir
with a fork until well mixed. Form the mixture into patties. Brown in
a skillet in hot oil until golden brown on each side. (Mixture may be a
tad crumbly.)

Yield: about 8 salmon patties

*I didn't have any sour cream so I subbed 2 Tbs. prepared mayonnaise.
