Default Question: Bacon and ground pork prices

Ground pork is always cheaper than hamburger.

But...bacon is ALWAYS more expensive than hamburger, unless we're talking about very lean hamburger!

What's going on?

Also, for what it's worth, I don't THINK pork chops are much more expensive than ground pork - maybe because those include bones, even if they have less fat. (But then, I have yet to use ground pork anyway - I don't know if it tastes as good as sausage or not.)

I don't know much about meat prices these days because I don't do as
much of the shopping as I used to. We used to deal with the Dutch
butcher in town and I used to bicycle over (weather permitting) to pick
up out meats, but now we deal primarily with an Italian grocery in a
nearby city. I only do it about once a month.

It costs money to keep them. When they are young they grow quickly. The
bigger and older they get the more it costs to feed them and their
weight does not increase as much as the cost of feeding so the farmer
has to deal with diminishing returns.

My niece married a guy from North Carolina. From what I have heard, home
made sausage meat is breakfast staple. That does not happen around here.

There isn't a lot of it on a pig, it has to be processed and
packaged differently than chops, too. And people will pay it.

It's not really 'so expensive' compared to other good meat.
