Default I made this for lunch

The dressing recipe halved nicely. The grapefruit has all the
membrane cut off, in case that's not clear. I thought this looked
good as it has all ingredients that I love, even the Texas Rio red
grapefruit which is the only kind I like. I put some dressing in a
bowl and added the romaine and tossed it, rather than drizzle.

Delicious.


Romaine Salad With Grapefruit, Avocado and Goat Cheese

This fresh, seasonal salad from Los Angeles€“based Love Catering is a
Hollywood favorite. €śThis salad is one of our signatures,€ť says culinary
director Jessica Mills. €śIt has been featured at everything from photo
shoots to galas to intimate dinners at clients homes.€ť


Ingredients
—¦Â˝ cup Champagne vinegar or white wine vinegar
—¦Â˝ cup Dijon mustard
—¦2 minced shallots
—¦Salt
—¦Black pepper, freshly ground
—¦1½ cups extra-virgin olive oil
—¦10 cups romaine lettuce, cleaned and torn
—¦1 avocado, peeled and sliced
—¦1 ruby red grapefruit, peeled and sectioned
—¦2 oz goat cheese, crumbled

Directions

In a small bowl, whisk together Champagne vinegar or white wine vinegar,
Dijon mustard, shallots and salt and freshly ground black pepper to
taste. Gradually whisk in extra-virgin olive oil.


Divide romaine lettuce between 4 salad plates.


Top evenly with avocado, ruby red grapefruit and goat cheese. Drizzle
with dressing (you might not use it all).
Serves 4.

looks yummy. I need protein so I might add some sliced chicken to this.

That would work out great. It's a very tasty combination that would do
well with chicken.

It's a nice yin and yang type of thing, and there wasn't a bit of
salad leftover.

I wondered when you mentioned goat cheese in an email what you were
buying it for. I know cheese doesn't usually agree with you. I'm glad
you enjoyed the salad! (If I liked raw greens I'd probably enjoy this.)
