Spatchcocked chicken and roasted vegetables. Seasoned simply with
salt and pepper and garlic powder. Vegetables are quartered red
potatoes, carrot chunks and onion wedges (under chicken)

I emerged from my chambers around 12:30 this afternoon, hee hee. I made this for my wife: kim chee fried rice and fried pork chop. It's a bit too early to think about dinner but a calzone would be cool. Unfortunately, I'll have to cook it in the toaster oven.

Pork chop looks good. Not sure if I would like the rice but would try it.

We had Huli Huli chicken thighs, roasted sweet potatoes, tomato and
onion salad.

Huli huli chicken sounds good. My daughter worked at a huli huli chicken restaurant. I could go for some now.

What's the green stuff underneath it? Looks intriguing.

We had grilled salmon, boiled potatoes and tossed salad.

Tonight will be grilled chicken and (if it looks good at the store when
I go) asparagus.

That one is not for you I was in a hurry, had no ideas, needed to
start dinner. I took a pork roast and patted a whole package of
Lipton onion soup on it, surrounded it with vegetables and put it in
the oven. To my surprise, it was pretty darn good.

I love meatloaf sandwiches (cold only) I never knew about them until
the neighbor across the street made them for a bunch of neighborhood
men who were helping her husband with a project I got a request
after that for more meatloaf sandwiches

My years of eating meals on the road taught me that if a diner had
meatloaf or meatloaf sandwiches on the menu it would be the best thing
to get.

That would be pizza, Chicago style or rather, my impression of one. To get a better feel for it, I have to live in Chicago for a while. It's a deep dish pizza with a top crust with sauce and cheese on the top. It's supposed to be goopy - well that's my story and I'm sticking with it.

I'll use it for most things where onions are used as a seasoning. It gives a pretty intense onion flavor. I wouldn't use it for things like fried rice or when onion is needed for texture. It's one of the great timesavers in my kitchen. It's something I don't ever want to run out of.

I put some mushrooms and tomato and spinach in the pie. I used hamburger to
make a sausage-like substance. Fennel seed would have been great in the
hamburger but I didn't have any. On top was just sauce and cheese. I'm gonna
have some for breakfast. The thought of that makes me happy.

Please regain your health again. The Chicago pizza sort of looks like a giant English pie don't it? Next time I'll use a shortcrust and make a meat pie. That pizza was too heavy and gooey.

I just can't do a meat loaf sandwich. I've tried them in the past but
IMO, much better just to heat up leftover meatloaf and recreate the
original meal. or just eat it plain and heated for a snack.

It is odd cooking an iconic dish without ever knowing its true essence. I don't really know what a Chicago pizza is supposed to taste like any more than the folks here know what a real laulau is.

It is odd cooking an iconic dish without ever knowing its true essence. I
don't really know what a Chicago pizza is supposed to taste like any more
than the folks here know what a real laulau is.
