Default REC: Fresh Strawberry Pie


Here's an easy one:

Fresh Strawberry Pie
From: Illa - 1971

one baked pie shell
1 quart strawberries (slice into shell)
Bring to a boil and thicken:
1 cup sugar
1 cup water
3 tablespoons corn starch
immediately add:
2 tablespoons strawberry Jell-o
Mix, cool, then pour over strawberries and let thicken

This one of my favorite desserts. When I was a kid and one could still
get some yummy food at Big Boy restaurants, their fresh strawberry pie
was a huge favorite of mine. This recipe, almost identical to the one
I have, comes as close as one can.

Ever had a slice of strawberry pie at any of the chain restaurants
piled how with whipped cream? That's how they make theirs and the
Jell-O part is what keeps the strawberries in a cohesive mass so
when you slice the pie the berries are not falling everywhere and
juice dripping all over the place.

My guess is that they use a starch based gel powder instead of animal based gelatin. They'll add red coloring and sugar. It'll look pretty and be more stable but Jell-O probably tastes better.

Jello has it's uses. I know a lot of people here are disgusted by the
thought of Jello salads. I have never made one, but I will gladly eat
them. Last Sunday he went to a party at a friend's place and there was a
lime Jello and cucumber salad being passed around. I tried some and
thought it was pretty good.

You're probably right about the starch based gel powder.
Whichever it is, it makes a good tasting strawberry pie
that's not running all over the plate.

I'll go one significant one step and say make home made crust, using butter only!

2 cups flour (White Swan)
1.5 sticks unsalted butter, 60F in temp (cool room temp)
1 tsp salt

Cut together with forks until butter lumps are tiny (squeeze thru fork tines) and flour covered.

Add 1/3 cup COLD 40% cream, stir together briefly! Add sprinkle of cold water if not coming together into dough rapidly. STOP STIRRING when dough comes together. Leaving a little unmixed is superior to mixing them in! You can press them together later so now bunch up into a lump gently and put in plastic wrap to completely cover and and let rest for 1 hour min. in cool place before working. Overnight in cool place best. Can be refrigerated or frozen, but let come to cool room temp before working.

I like using corn starch to gel fruit pis like strawberry. Use enough and it gels well! I don't measure I just throw a bunch on and it always works. But I used to be a professional baker too!

Yep! 3 to 4 TBS of corn starch would gel that up very nicely! Add some Chambord too because it is delicious!

You can do it with plain gelatin, sugar, and fruit juice. I don't
have a recipe to hand. I used to have the Time-Life Foods of the World
set, and it was in the Cooking of Germany book.
