Default Ping Dave Carving Sets

Guess what I just found in the drawer in the sideboard? Never knew that
carving knife and fork set were there. Not the same pattern as the
silverware. It's marked Wm. A Rogers and marked stainless. To me that
means stainless steel. Since when does stainless steel tarnish?

The blades are stainless steel, the handles are probably silver.

Fancy stuff there. I could never get a good sharp blade on the stag
horn set.

Probably. But since I didn't know I had it I really haven't had a
chance to examine it.

Well, I don't know about that gifted stag horn handle set. This set is
very sharp. Doesn't appear to ever have been used.

I have a similar set, SS blade/tines with hallmarked silver handles by
Viners of Sheffield. It was a wedding present to my sister but as she
rarely used it, she gave it to me a couple of years ago. SS is a bugger
to sharpen.
I have an old fashioned game carving knife of carbon steel that can take
a good edge and my grandparents' old carving knife that was sharpened so
many times that the shape is really wierd.

That;s like my grandfathers kn ife, which I have, horn handle which is
great for gripping and the blade is likely carbon steel. I'm not
sure. I use a honing stone about once a year, and steel the rest to
keep the edge fine. It's basically a crescent shape after nearly 2
centuries of use.
