I'll be okay with it but the others likely won't. Wasn't my fault. I thought
I bought good corn enchiladas. I do use the word "good" loosely as these were the packaged ones. I know the only true quality ones are made fresh. At any rate, these seemed worse than usual in terms of breaking into pieces. Every stinking one of them broke as I tried to take them from the bag. So... I just ripped them into pieces and layered them. To me, this isn't the prettiest presentation but it's easier then making enchiladas and it all eats the same. But the other two dislike this dish. The key here is not to overbake. I think I put them off of this during my Crock-Pot phase. I followed the recipe as written and came home to mush. To quote some chefs from the show "Chopped", the flavors were there. But flavors will only get you so far. If I want mush, I'll have hot cereal. Anyway... To me, there isn't much difference aside from presentation from a rolled enchilada so long as they aren't overbaked. |
