In my neighborhood, residents who park on the street also made sure to roll
up all their car windows in addition to locking their car doors...otherwise, they
would find some zucchini in the car in the morning. LOL.

I can relate!

Years ago, my FIL and I re-purposed his backyard fer gardening. He planted a
few zuchs. Come harvest time, after everything had been eaten, zuchs
were sprouting up like out-of-control zombies. We got sick to death
of 'em and would've, no doubt, put 'em in neighbor's cars, but didn't
think of it.

I now use 3 small zuchs fer my minestrone soup, but other than soup
and stuffing/baking 'em with some kinda rice crap. what's a zucchini
good for!?

Zucchini bread (make batches and freeze), and zucchini cake are both delicious. You
can always grate or dice them and sneak them into casseroles like lasagna so y'all
Get more veggies....a restaurant around here makes the best lasagna ever, and there
are fine-diced carrots mixed into the meat layers. You can't taste or see 'em, but they
are there.

No, the courgettes are essential for the yummy texture. They make it a
very moist cake , not too sweet.

They won't even know. The courgettes are absolutely invisible, nobody
would ever guess they were in it.

It's a school-dinner recipe from Landscove school, passed on to me by
someone who lives in Landscove. I've made it many many times.
