Default Date Nut Bread

I figured I would bake a loaf before it got hot again. My mom used to make
it all the time and I used to make it when we lived on Cape Cod and had
overnight guests. I often had to work early in the morning then so was gone
long before they got up. I would leave this on the counter and maybe a
breakfast casserole in the fridge to be eaten cold.

The problem? Not that it's really a problem, but... I can't remember what
recipe I used. Not even sure that I have that cookbook any more. I know it
was in an old one. Likely one of my dad's. But they got so much use and
dated back to the 40's and 50's. They became decrepit and I got rid of some
of them.

In looking online, I see quite the variety. Some call for prunes, coffee,
molasses, raisins soaked in water (discard raisins and use water), or even
applesauce. I don't recall using any of those things before. I also don't
recall using whole wheat flour and most recipes now call for a mix of that
and white or even whole wheat pastry flour.

This is the recipe that I went with because I have all of the ingredients,
and it makes just one loaf. I did swap coconut oil for the shortening. Only
reason, at some point I bought a giant container of coconut oil. Someone
stuck it in a weird place. I gave up on finding it, bought another
(thankfully smaller container) and then it showed up. So I want to use that
up. Also screwed up and added 1.5 cups of white flour. I need to go mix the
flour/sugar part with the nuts/dates and I think the batter is a tad moist.
If too moist, I will add a bit of whole wheat flour. I think in overall
terms of how it comes out, it should be fine even with the screw up. We'll
see.

Do you make date nut bread? If so, is your recipe similar to this?

I found another quick bread recipe called Logan Bread. I might try this next
although I doubt I will use the sunflower seeds unless I can find cheap ones
somewhere. Online prices looked expensive. Also had to get some more
ingredients like molasses because I am fresh out. This recipe makes two
loaves but looks pretty forgiving and I can use whatever I have on hand in
terms of nuts/seeds.

Reason I want this is because I have some young people coming every few days
to do some yard work. Have had a hard time finding reliable and affordable
yard care. So far so good with these people, but they work up a voracious
appetite and I thought this bread would be good to keep on hand for them. I
can slice and freeze it.

I haven't made it for a long time, but I do love it. I used an old Betty
Crocker recipe when I made it, no whole wheat flour though.

Ah... I will look into that. I got a used Betty Crocker cookbook last year.
I had it before. It wore out. Got a newer one and the recipes weren't the
same. So the used one is the same as what I did have. I know I made a muffin
recipe from it.

After 40+ years of use , our original BC cookbook was worn plumb out
.. I was lucky enough to find one of the same printing , though it was in
loose leaf format rather than bound book - ebay is my friend . All
recipes are the same , and we be truckin' on . Many of my recipes are
based on recipes from that book .

Mine is loose leaf too. I'll bet it's the same one.
