Default Cajun Roast Beef

Dinner yesterday, Cajun roast beef

This is a piece of bottom round. First step with the meat is to make
holes to stuff with the seasoning. Insert a paring knife, turn 90
degrees and insert again. Open the hole with your finger.

Mix together the Cajun holy trinity (bell pepper, onion, celery) garlic,
salt, pepper, gumbo file, cumin, olive oil.

Stuff the holes with the mix, the coat the top.

I roasted it at 275 for about six hours in the smoker. Can be oven
roasted but I wanted to add another flavor layer. Once seasoned, I let
the meat sit out for an hour to warm up a bit before cooking

It was fairly tender. I was afraid to let it go much longer but I was
thinking it may be better, like brisket, but it could also have turned
into a dry brick. I imagine it would be just as good or better with a
rib ryr roast.

Can't really see much other than something totally blanketed with a
New England snow storm of chopped veggies. Would have been better to
see your beef sliced and plated.

I'd have used top round, bottom round contains a lot of silver skin,
gristle, and fat... top round costs nearly the same or the same price.
I've been very disappointed with bottom round in the past so I
wouldn't spend all the time and effort you did preparing it even were
it free. I consider bottom round poor quality feral critter food,
only a scutch better than road kill, perhaps lower quality than some
fresh road kill.. I hear tell from some rural folk that young possum
is very luscious, better than veal.

eating my field pea plants . I shoot 'em (head shot only allowed) with a
..22 , and just about every single one has at least one bot fly larva ,
usually on the neck . If you'd like I can quick-freeze some for you and
ship it packed in dry ice . I'll leave the skin on but will gut them for
you (they freeze faster that way) . Just send me your mailing address

A couple of days ago I saw a young family of deer meandering across the
street at a nearby intersection. In broad daylight. I should have just
hit one of them with my car so I could have brought home fresh young
venison *and* filed a claim against my auto insurance! LOL

Of course I wouldn't! My remarks were facetious.

I really did see a small young family of (four) deer at an intersection
a couple of days ago. They in someone's front yard snacking on some
shrubs. I spotted them as I got to the intersection. I saw people in
another car coming had stopped to watch them. So I did, too. And
another car stopped coming from the other direction. There was a buck,
a couple of spotted fawns and a doe. They sure did take their sweet
time walking across the street. I wish I'd had a camera!

point A to point B with very little maintenance or worry.

It's a very reliable vehicle, still less than 35,000 original miles on
it. I don't go driving around pointlesslly. It gets great gas mileage.
Sure, a deer *could* kill me if I hit one. So could a little old lady
in a parking lot driving a big-ass Buick.

Don't worry. A deer can do a lot of damage to a car, but the chances of
you getting killed from hitting it are slim. I suppose you could suffer
a broken jaw and loosened teeth like a friend of mine did when he hit
one in Virginia a few years ago. A moose is another matter. There are
at least four times bigger than deer and they have long legs that buckle
on impact and that 1,000 lb plus animal comes right through the windshield.

FWIW, I was almost hit by a deer while bicycling a couple years ago. It
was during the spring. The car ahead stopped to let some deer cross the
road. Three stayed back. The car left and two of them crossed. The last
one was nervous about me and worried about being left behind. I waited.
She finally dashed toward the road, running through some wet grainy
snow, leapt up over the berm and into the road where he hard little
hooves slipped in the pavement and she slid to within a couple feet of me.
