Default Beef and vegetable casserole

I had some ground beef to use up but none of the usual stuff sounded
appealing. I found a recipe that called for sliced potatoes, a can of cream
of mushroom soup, milk, onion, salt, pepper and cheese on up. Basically you
brown the ground beef, then layer it with thinly sliced potatoes and the
sauce made of the soup, milk and onion. Bake at 350 for 1-1.5 hours then add
the cheese till melted.

Reviewers said it worked best to cover the potatoes for an hour and add
extra seasonings.

I added more onion, celery, small cans of corn, peas, green beans, parsley,
a little garlic powder and two pouches of Velveeta cheese sauce.

Despite cooking it for a full 1.5 hours, a few of the potato slices were not
totally tender. This is likely due to my cutting them a bit thicker. Wasn't
really a problem. I made the casserole last night and had a small amount as
a bedtime snack. To reheat, I just cooked for longer in the microwave, until
the potatoes were tender.

Very tasty, worked out well and allowed me to use up a few things.

Â* My wife has a similar recipe for the slow cooker . She layers cubed
potatoes , browned ground beef , carrots and green beans then pours a
couple of cans of mushroom soup over the whole mess . I'm not sure what
if any seasonings she puts in/on it but it is mighty tasty . Cooks it I
think 4 hours on high .

Didn't think to do it that way. Probably would have been better if I had.

Sounds to me like a tasty home comfort meal. I've done similar in
the past. Ingredient wise, it's pretty much the same as a cottage
pie. At least close enough. That combination is never a fail.

My mom made something similar to this growing up. She would fry hamburger
with onion, mix it with sliced potatoes and carrots, salt and pepper, then
add a milk, flour, butter white sauce and bake in a casserole dish. No
cheese, however. We called it "hamburger hotdish" growing up. I make it
too once in awhile because it's good comfort food.

I made something like that last night. I had some ground beef and combined it with dehydrated potatoes and cheese to make some kind of goopy dish. Surprisingly, my wife liked it. Hopeful I can fix something better.

I needed to use the hamburger up and was running low on fresh food.

I did chicken Teriyaki for the other two. I did cook the rice. Chicken came
refrigerated. Kroger brand. Asian slaw from Costco. Got a premade Mexican
meal for myself from Winco. Tomorrow will make brown rice Spanish rice with
the rest of the ground beef. They might not eat that. They don't like brown
rice.

Sounds like a fine meal!
