Just curious if anyone has tried this. I am about to make what I would
loosely call Spanish rice. Not a side dish but a one dish meal. Brown rice, ground beef, asst. veggies and seasoning. I am the only one in the house who eats brown rice. My new lawn guy said he preferred the brown as do I. And I do feed him a meal from time to time if he is here around meal time. He does currently have some work to finish up but I am not sure that he will be back in the next day or three due to a nasty insect bite that required a trip to the ER. So... If he isn't back here in time to eat the rest of it, would it do well in the freezer? If so, would I be able to reheat from frozen? I don't really want to freeze it but OTOH, I don't want to waste the food. Thanks! |

It's not optimal but it works better if the rice is double sealed in baggies (ziploc) then reheated in short bursts (15 second) if using a microwave. May find it works best with a water mist spray if you have one that is clean for such. -- |

Interesting that you would bring this up tonight , we had some "spanish" rice (no meat, just tomatoes and seasonings) with our chicken fajitas for dinner tonight . We don't have a history of eating leftover rice before it spoils and I was considering freezing it for later . In a vacuum bag , that foodsaver is a great preservation tool ! Â* -- Â* Snag |

BTW, if you add any type of tomatoes to it, canned crushed or fine dice work better there if freezing. Sause or paste with water tends to make mush. I do a bit extra (white rice in my case) and add some to my frozen lunches and those tomato versions make a difference. Seal in bags for freezing then remove to rewarm. Consider adding a few chopped black or green olives to the mix to your tastes if you have a few leftover ones. They work well. -- |

I usually make too much chicken/pork fried rice, and what is left over goes into the freezer. I freeze it in 250 ml (one cup) sour cream containers for a single serving. It thaws in the MW in a couple of minutes, and tastes as good as freshly made. Doris |

What I use depends on what I have. I have found that tomato sauce doesn't really absorb all the way unless I use just a little. I did use brown rice. Not in cooked food. Will leave in the fridge for a day or two and if he doesn't come by in that length of time, will freeze it. Perhaps in very small bags so it will thaw more quickly. |

I actually have some leftover white rice from the Teriyaki. Angela might eat that later. I've been looking for recipes that are filling and can be made cheaply. Have been trying to help him out when I can. He has been going through a rough patch medically speaking and this hot weather isn't helping. At least it was cool today but supposed to get hot again. I must be adjusting to the temps. Haven't really suffered much despite a record breaking dry spell and record high temps. The key for me is to get out of my clothes the minute I get in and put on some loose form of dress. Not sure what a guy would do. Heh. |

I probably won't have time to defrost as I never know for sure when he will be here. He got most of my work done but has been finishing stuff up in bits and pieces after he finishes his other jobs. So by the time he gets here, he's famished. |

This batch came out very well. Not too soupy, not too dry, just the perfect amount of heat. |

I use the defrost mode for a minute or two first when I am reheating frozen items and then regular power to get them to the right temp once they are no longer frozen solid. |

I often freeze meal portions of chicken and rice casserole, and rice/beef stuffed bell
peppers. Just make sure you have plenty of liquid or sauce in the dish, and it will be fine. I usually thaw in the fridge and then heat up (for cooked meals), but they can be heated from the frozen state. N. |

I've frozen cooked rice - white or brown - in individual portions to take for work lunches. By lunchtime, it's thawed and just needs to be heated up. But as someone else mentioned, if the rice has a heavy sauce it may come out mushy since most people don't have a device for flash-freezing at home. ![]() Jill |
