With two of us a dozen eggs over 2-3 days are not too many. However I
only do boiled eggs maybe twice a year so we consider it a treat...
and we both like sliced eggs in sandwiches, and neither of us likes
mashed egg salad and we especially don't care for deviled eggs.
Sliced eggs are very good in all kinds of sandwiches, I like sliced
egg and coldcuts sandwiches with lettuce, tomato, with mayo and
mustard.
I think deviled eggs (discheviled eggs) are way over rated, and are
too labor intensive. I don't like to eat foods that someone I barely
know fussed over and probably made them 2-3 days ago, the thought of
it is not very appetizing. My mother made good mashed egg salad but
she included onions and my wife can't eat onions. and I don't care for
it without onions. Sometimes we have to accomodate... the aroma of
onions makes her gag... I can always add sliced onion to my sliced egg
sandwiches when she's not home. I look at it this way, I consider
eschewing onions because she hates lamb more than I do. Essentially
we both like and dislike the same foods... I think eating is
sextremely important in a marriage.

I don't really get anal over it but after they have been there awhile,
I will make the effort to have an omelet or something to use them up

Not true... boiled eggs in the shell when refrigerated are only safe
for a like 4-5 days. With shells removed they can keep pickled for
like 2-3 months.

I experience that as well. Freshly cooked HB eggs have more tender
white
