Default Pea soup today

OK.... the soup is cooking but a bit of trouble here today.

Went to peel and chop up my 2 large sweet potatoes (bought them
about 10 days ago or so) and they both had halfway turned to mush
like regular potatoes can do sometimes. Arrghh@ I've had old
sweet potatoes turn hard and dry out but never turn to mush
before.

So...didn't want to drive out again so I just doubled the amount
of carrots. They are good too in the soup. They are bite sized
and not pureed.

This soup will be done in a couple of hours and I'll taste it. If
I really do miss the sweet potato taste, I'll just buy a couple
tomorrow morning while at the store, microwave them and add to
the soup. Only if necessary though. It will probably turn out
fine today.

I learned that sweet potatoes do not keep well. Keep in a paper bag and only
for a few days.

Really? I keep them in my fridge for over a week, and they are fine.

The information I have read says not to buy if refrigerated.

I buy a box of them at Costco every year in late summer. They last in
a cool, dark room until January or February when I use the last of
them. I've never had any go bad in a few days. Heck, my sister used
to plop a sweet potato in a pretty dish of water in the middle of her
dining room table every fall. It would make the most wonderful vine
splayed over the table for decoration. Even that potato didn't 'go
bad.'

Nor onions or regular potatoes and they're not refrigerated at
store so why would someone plop them in the refrigerator when
they bring them home? Most all root vegetables will keep fine
for months if stored in a cool dark place. No root cellar? A
box in a closet will do just fine.

Well, you don't live in the same environment that Julie does. Strange
things seem to happen in her town.
