Default Cooking for the freezer

In the last couple of few days, I have made:

Chicken and mushrooms(will make into a pies) Slow cooker
Minted lamb (sous vide)
Cheesy Cauliflower patties
Dauphinoise Gratins
Lasagnes
Apple crumbles (apples from the tree in my garden)

Phew. I am happy)

I'm right now making two homemade burgers with the works and
some homemade fries. That ought to put me to sleep for a few
hours. heheh

I made a large batch of stuffed peppers, most to go in the freezer
and some for tonight along with mash.

I enjoy doing a marathon of cooking and baking for the freezer, too.
However, you have a good deal more freezer space than we do. I did
that a few weeks ago and now have very little extra space in our
freezers until we use some of it up. For most things I prefer
freezing, but we have several shelves of foods that I pack into pint
and quart jars and process, either BWB or pressure. We do have an
ample supply of food ready to go for when I either don't have time or
not in the mood to start something from scratch.

Haven't posted in a very, very long time. I regularly collect chicken bones, leftover meat and gravy and freeze until I have at least three carcasses, etc. I make a large batch of chicken & vegetable soup and freeze in dinner potions. Likewise with chili and beef stew. My husband has started calling my chicken soup, stoup because it's so thick. I also make a pan of lasagna and freeze accordingly. And on with my mac and cheese with spinach and bacon. And with rice casseroles and on and on. Except in soup and stew, potatoes don't otherwise freeze well. The problem with this kind of freezing is that you need a separate freezer, which I do. I do this crazy cooking and then I relax and get a container or two out the freezer for a long time. It's quite lovely.

Hi Pam!

I do the same thing. (Bone broth from the bones). I also have a spare
freezer. Even a single person can make savings with a small spare
freezer.

I used to be making 15 'home made TV dinners' a week, which were my and
my daughters lunches at work/college. Now that she's graduated, she's
looking for work and pretty much making her own lunch. I'm down to
abut 10 per week now (Don or Charlotte snag about 5 randomly between
them during the week).
