Default Breakfast Frittata 10/18

Breakfast frittata this morning.

Saute chopped onion
Chopped roasted pepper
Diced ham
Small chunks of cheese

Added in order I let the cheese start to melt

Added 4 beaten eggs
fresh ground pepper
grated Parmesan cheese.

Put in oven until egg is set.

Very tasty and no one flavor dominated, I just hit the right portions.

It was my wife's idea; she has been wanting it for a few days now.

It does sound very, very tasty.

My breakfast was a homemade 'breakfast bowl.' I used
the last of my fried sausage patties this morning so
I'll have to fry up another batch Thursday morning.
They're stored in a covered bowl in the 'fridge ready
to be used when I have a hankering for sausage with
my breakfast.

Sounds very good only you forgot the onions... or like my wife you
can't eat onions.

I do a frittata about once a week, always different depending on
leftovers. Just a few days ago I posted about the one I made to use
up the last of the broccoli crowns. Since my wife was still in rehab
I used lots of onions, and I usually add diced potatoes too but
somehow I forgot... but still I used the whole dozen eggs, made three
dinners.
She'll be home a week from this coming Sunday... she's doing so well
that they are releasing her a week early. A couple of days ago she
advanced from a walker to a cane and today she was able to walk
without a cane. Everyone at the rehab facility is amazed at how well
she is doing... they told her that people who have a double knee
replacement don't get out of bed for the first week, she was out of
bed and using a walker less then 24 hours after surgery. Tomorrow
I'll go into town, Tops Market is having a three day sale on top round
steaks, Th, Fr, Sa, $2.69/lb. I'll buy enough to make a dozen 12 oz
burgers and a five pound meat loaf to celebrate her return. She loves
meat loaf and her oldest son is driving her home and he loves meat
loaf too. With a five pound meat loaf I can sneak in a small onion,
just grind it in a little at a time, along with raw potato.

Yes, she laughs at the burger flipping snowflakes, wondering why they
don't get a real job... she thinks they're all sissies... she thinks
most young people these days are sissies. She's been a substitute
teach in twon for 15 years now... she tells the high school kids that
there are plenty of good paying entry level jobs with a future. Lat
year she had on young boy who was about to graduate and had no idea
what he wanted to be when he grew up. She suggested he apply for a
job at the large plant nurseries so he did and spent all summer
working as landscaper helper planting shrubs and trees. He applied
to a nearby college that teaches a course in becoming a certified
arborist (tree doctor), he's doing very well, but more importantly he
likes it.
