With ya Dave, same here.

I can see adjusting at need with dehydrated potatoes. Long gone are
the nasty ones of the 70's with the metallic undertaste.

That's amazing considering the ingredients:

IDAHO® POTATOES WITH EMULSIFIER (MONO AND DIGLYCERIDES) AND
PRESERVATIVE (SODIUM ACID PYROPHOSPHATE, SODIUM BISULFITE, CITRIC
ACID, MIXED TOCOPHEROLS)

You can see that they go the extra mile, because they pre-mix the
tocopherols, so the consumer doesn't have to do that.
