Default Tomato Beef

Although I don't like most Chinese food, this is a dish that I do like. The
problem? I lost the recipe.

When I was a teen, a boy I babysat was selling little books to earn money
for his school. I bought one from him of Chinese recipes. It was seriously a
little book with perhaps 30 recipes at best. None of the other recipes
interested me. Only that one and while I highly doubt it was authentic, it
did taste exactly like what I have gotten in restaurants both here and in
CA. It's Cantonese and a lot of restaurants don't have it on the menu. I
have also gotten it on occasion where I didn't think it was very
flavorful/good. At any rate, I got rid of the cookbook in doing a book
purge. But now I can't find the recipe.

Yes there are recipes galore online but I can't seem to find any like this
one. The difference was that this had already made up beef gravy in it. I
also remember it having tomato paste, sugar, sesame oil, perhaps peanut oil
for cooking, the beef steak, tomatoes, white onions and green bell peppers.
There may also have been black pepper, soy sauce and a few other things that
I don't remember. And I would sometimes add other veggies such as carrots,
celery, bok choy, pea pods, etc.

I have seen recipes that call for beef broth and cornstarch so it appears
that they will make a gravy but most also call for ketchup and other things
that were not in my original recipe such as some sort of vinegar, wine or
ginger. Sometimes even fish or oyster sauce. This is not the right flavor
profile. The dish I am wanting is quite sweet. I also don't want to have to
buy things only to use a spoonful or two and then not wind up with what I
want.

Most of the recipes also call for marinating the beef. I do not recall
having to do this. I do remember freezing it at least partially, cutting in
strips, stir frying then removing it from the pan. The veggies were all stir
fried one at a time, added to the beef, then the ingredients for the sauce
were added in, quickly cooked and then the meat and veggies added back in.
The dish should contain a lot of sweet sauce and is served over rice or
noodles.

Often, the pictures I see online are of a stir fry but the dish has little
to no sauce in it. Yes, I know I can just wing it, tasting as I go. But does
anyone have an actual recipe or link to one that uses made up beef gravy?
