Default Dinner tonight 11/6/27: Veal with Tomato Sauce

Veal Parmesan. Pan fried breaded chopped veal, simmered in tomato sauce
seasoned with onion, garlic, oregano and basil. Dotted with fresh
mozzarella and heated through in a covered skillet. Quite tasty.

Sounds good. Better that our dinner of leftover meatloaf and fried
potatoes, though they were quick and tasty with a salad.

Hmmmm I had meatloaf one night last week, and the next night we had the
leftovers reheated. It may have been better leftover than it was fresh.

Quick and simple here. Standard hot turkey sandwiches with mashed potatoes,
corn, peas, gravy.

Huh. We always make veal parmesan with whole veal cutlets, not
chopped.

Both sound better than what I had for dinner. Many Progresso
soups are pretty darn good but not all. Last night I heated up a
can of Progresso Cream of Mushroom soup. I ate that with a
buttered roll. Not awful but the buttered roll was the best part.
I won't buy that again.

Two Progresso's that I do like though is:
- Chicken Corn Chowder with bacon
- Chicken Pot pie

I bought a "Vegetable soup" can today. It was on sale so I'll
give it a try.

I love leftover meatloaf reheated with sides (the original meal
recreated) vs on a sandwich. No matter how large I make a
meatloaf, that's one thing that never gets into the freezer. I'll
just eat and eat until it's gone.

That and also cottage pie and homemade lasagna.
