I would guess that 100% of them are immediately put on ice (or
they should be). The only way a soft shell crab can be caught is
to spot one in shallow water and chase it with a hand-held net
and scoop it up. They hide out until new shell hardens and they
can't eat either as the claws are soft mush. Commercial crabbers
never catch soft shell crabs but they do see signs of ones caught
getting ready to molt.

Those crabs are kept in holding tanks and constantly checked
until they finally do back out of their shells. I've seen that
operation at a place on the Eastern Shore of Virginia several
years ago. Right when they finally get out of old shell, they are
immediately harvested. Not killed but packed in ice. This is
regular ice (vs salt water ice). The cold temp (33-34F) puts them
in hibernation mode plus without the salt water, they don't
harden. So they aren't actually frozen but very close. Packed in
boxes, layered with plenty of ice.

These are what is shipped to restaurants everywhere. And....I
don't know if they pack them in salt water ice to ship, that
would freeze and kill them but still be good. Most shipping
overnight of seafood uses dry ice.

I've caught, picked, and frozen crab meat (in 1/2 pound baggies)
and it's just as good from the freezer 8 months later as it was
fresh picked. Freezing seafood does NOT reduce it's quality. The
Japanese buy frozen on the boat tuna and pay a premium price for
that. Any swordfish you buy was also frozen at sea (immediately
beheaded, gutted, then packed in salt water ice). Alaskan king
crab is kept alive on boats in a hold but the buyers immediately
cook and freeze them. No loss of quality. None at all, Sheldon.

Try WAY less than a couple of hours. I was crabbing once. While
waiting for bites on the lines, I walked around through the
shallows (12-18 inches deep) and a nice sized crab ran right by
me. I chased it down and scooped it up in my crab net. It had
*just* molted because as I took it out of the net it was
completely soft like handling a piece of raw meat.

That's a very rare catch so I decided to go on home right away
and finally try a soft shell crab. Took me about 45 minutes to
collect my lines and quickly drive home. To cook a soft shell
crab, you just kill it, lift the two pointy ends of the shell and
remove the gills (aka 'dead men'), then fry and eat the whole
body.

Anyway, just in that 'less than an hour' time the crab had
already formed a 'paper shell.' That's the new hard shell
developing. I cooked and ate it, but that paper shell ruined it.
Kind of like eating a piece of good meat still wrapped in thin
cellophane. Nasty texture.

You just need the ferret now My current cat, had her two years
next month, finally became a lap cat the other day. I was so
surprised but now I wonder what happened to her before she was here
that made her so suspicious of humans. She even peeks out when
friends are here.

Don't shoot the messenger. I'm not saying it's a good thing to do, just

I can find catfish at the supermarket from time to time. They *claim*
it's not previously frozen. If it isn't, it would have to be well iced
and flown in just for the sale. The sea islands aren't catfish country.

Crawfish/crawdads are definitely not native to these islands. I can
find frozen crawfish tail meat which is fine for the rare times I want
it.

Really, Carol? The only Gary I know on RFC lives close to Virginia
Beach. Not that it matters. Even if he moved to the Texas gulf coast,
the food wouldn't be the same as what Dave can expect to find on Tybee
Island.

That was kind of my point. The restaurants down here don't serve frozen
soft shell crab. Only what's caught during the season, around here
usually May, maybe into June. Available for a brief time, then they're
gone. Even then, not every restaurant offers them. They have to have a
good local source.

For more than 40 years my wife and I have been going to September Camp
in Algonquin Park. Minimum stay is 5 days, and we have learned to pack
for 5 days of cold weather and five days of hot weather.

(layers).

Stop being obtuse. The food in all the different "coastal" areas is not
the same.

Remember you thought it was odd for me not to be able to find hush
puppies on restaurant menus down here? It's the same thing. They're
just not common. If I see hush puppies on local restaurant I'm
pleasantly surprised. IF he saw frozen soft shell crab on a menu in
February, I'd be amazed. Okay?!

There are quite a few things that are available near the Dutch coast,
but not near the Australian coast and vice versa. Different fish and
different shellfish.

Believe it or not, I used to buy small chicken livers in small tubs and
fry them for my husband. They were cheap back in 1982. (Yes, folks,
way back at the beginning of time I was married.) I rinsed the chicken
livers, tossed them in seasoned flour, pan fried them. I don't remember
what (if anything) I made to go with them. I never had any desire to
taste them.

I didn't grow up eating this sort of thing. My parents did love calves
liver sauteed with onions but they didn't make us eat it as kids. They
did not cook chicken livers.

I won't cook or eat either one.

It was simple. Gary apparently made a joke related to shifting to the
timezone but I don't read every message here, nor do I hang out looking
to accuse others of things. I patch read a few messages of interest
then blow the rest away.

Gary explained it. I caught one of his posts that had I read the rest
of the thread, would have been 'tounge in cheek' but as I'd not seen
the rest, looked like he'd moved.

Seriously, do all of you read every message here? I apologize if it
truely offends any that I do not. I never have and never will read all
the messages here.

Not me. Some threads are of no interest, but I may take a peek on the
long running ones. With thread drift it may turn into something of
interest.

No kill file on this group either. OTOH,I just don't get some of the
squabbling that goes on but no one can change it, you have to change
yourself. Simple rule from a quote I heard. "Don't try to be better
than someone else, try to be better than yourself".

I don't think I even commented in the "Gary" controversy thread except with
a joke to Jill, so I have no idea what she's talking about, but then that's
not unusual with her misquoting either.
