when I'm in the mood for catfish, I deep fry them. It's pretty much
the only thing I deep fry. But I love the crispy coating. But you
have to be really careful, the catfish juices are incased in that
crispy coating and if you bite down too soon you are going to get an
bad mouth burn.

Oh, I love it (and other types of fish) battered and deep fried. Yes,
be careful! Cut a piece with a fork and blow on it. Even then, be sure
to have something cold handy to sip! Mouth burn is no fun.

These days I leave the deep frying to restaurants. Mainly because I
don't have a way to store all that oil and ensure it would be used again
in a timely manner.

coffee filter to a large mesh strainer. Me, I just don't want to deal
with that much oil, much less straining and storing it.

they take a long time to drain but do an excellent job

Yeah, I've found several ways. I guess is what keeps me from buying a
true filter is mere selfishness (Is that right, grammatically?). I'd
rather spend my meager fixed income on things that taste good.
